La pizza resta nel piatto per pochi minuti. Per arrivare fin lì, servono anni.
Sono quelli che Mehdi ha nelle mani: nel modo in cui sente l’impasto, nella pressione precisa delle dita, nel gesto sicuro con cui lo stende, nell’occhio che sa riconoscere il momento esatto in cui il forno ha fatto il suo lavoro.
Farina, calore, attesa, esperienza. Poi tutto scompare dietro qualcosa che sembra semplicissimo: una pizza appena sfornata, da portare al tavolo e condividere.
