The best week of summer is the one after everyone leaves.

The light turns softer and lower, the beach empties out, and what's left belongs to the ones who stayed. September was always the secret, you only had to be the kind of person who waits for it.

The second summer. Ours, and now yours.

Thirteen hundred labels, and a team that knows them all by heart.

Behind every bottle that reaches your table is someone who chose it, remembered it, and matched it to what you're eating: Ivan Rizzo, Corporate Wine Director. Salvatore Apruzzese, Head Sommelier. And the sommeliers who keep the rest in order, Federico, Davide, Nikolay.

The rest is a room full of bottles. The difference is them.

The light goes first, then the noise.

By eight the sea has gone quiet in the distance, the tall fronds only shadows against it. Step inside and the evening changes key: warm lamps, old paintings, the hush of a smaller room.

Some dinners you eat. This one you remember.

There's a blue here that never quite ends.

The open sea, the still water of the pool, the sky holding them together. At some point it stops being a colour and becomes a feeling.

They call it the infinite blue.

Italian cooking has never needed much. Good pasta, a fish caught that morning, and the discipline to leave them alone.

Everything here comes from close by. The rest is restraint.

Gin, basil, lemon, and a hand that has done this a thousand times.

Nothing here is kept warm under a lamp.

Breakfast is à la carte, cooked the moment you sit down. It takes a little longer that way. That is the point.

Sardinian millefiori honey, bread still warm, and no one counting the minutes.

Served daily, 08:00 – 10:30.

The water is at its stillest just after nine, before anyone has stepped in.

White stone from Orosei, warm underfoot.
A horizon with nothing on it, and a silence with nothing in it but the sea.

For the ones who came here to do exactly this: nothing, slowly.
