Panzanella is the definition of Tuscan summer comfort food. Simple, refreshing, and incredibly delicious.
The word "Panzanella" comes from two staples of Tuscan culture: "Pane" (bread) and "Zanella" (the deep soup bowl it was traditionally served in). Born as a clever way for farmers to use up stale bread, it’s now a timeless classic.
The beauty lies in the simplicity of the ingredients: stale Tuscan bread (unsalted), ripe, juicy tomatoes, crisp cucumbers, red onions, fresh basil, top-quality extra virgin olive oil & red w**e vinegar.
First, we soak the stale bread in water with a splash of vinegar, then squeeze it out completely and crumble it into a bowl.
We add the chopped veggies, tear in plenty of fresh basil, and dress it generously with olive oil, vinegar, salt, and pepper.
The real secret? Letting it rest in the fridge for a few hours so the flavors marry perfectly!
