Today I'm changing the subject. When our guests arrive at the hotel, the first thing they ask us is: what are the typical Tuscan dishes? I'll start with Ribollita, the first thing they taught me.
Ribollita is a hearty, fragrant, and authentic Tuscan peasant soup that I deeply love for its ancient history and authentic flavor of home and tradition.I prepare it with stale Tuscan bread, black cabbage, Savoy cabbage, beans, and seasonal vegetables, and as the name suggests, once cooked, it is re-boiled several times, becoming even better.
