A hub of activity at the coop this morning. Thelma laying her egg with old Rocky guarding over. Lovely to see the camelia plants flowering also. Stay tuned for more coop garden updates.

Nice to see old Rocky the rooster out and about. He hasn’t ventured out in the open for nearly six months after an encounter with a fox.

With winter setting in “Cool Chick’s Coop” has a new automatic chicken door to keep the chill out at night. Self closes at 6pm and opens at 5am.

The hens are so happy that they are still laying eggs everyday. Extra meal worms, protein and a warm covered run helps keep them happy and healthy.

Harvest time! We produce our own Organic Extra Virgin Olive Oil for guests to enjoy. This year’s harvest proved to be robust and of exceptional quality. It’s been a tough year with some olive groves not producing much crop due to a dry season; but our grove is well positioned and the fruit yield much higher product. The taste is exceptional as always. Pure Organic Liquid Gold!

Such a pleasure to cook this up for our guests tonight on their return from canoeing. They have enjoyed their stay of two weeks loving our location as it’s close to so many activities including the mountain, beach and everything in between.

Fresh live seafood (scampi, muscles, clams, vongole, fish) purchased from the fish market with tomatoes and herbs from the vegetable garden. Fresh bread with our own organic olive oil toasted to accompany.

Harvesting some tomatoes early in the morning for our guests’ enjoyment.

Our vegetable garden with zucchinis, cucumbers, eggplants, variety of tomatoes, corn, herbs and melons are in abundance.

Nothing better than picking your own fresh produce to add to your breakfast, lunch, or dinner.

When only the freshest will do. Bisque ingredients sourced from the vegetable garden at Villa Ettore; tomatoes, onions, basil, thyme, garlic. Add some hand picked live seafood from the local fish market. Toast some bread with our own organic olive oil; and what do you have? The most mouthwatering seafood bisque fit for four people.
