​We had an incredible day hosting a special cooking class here at Castello di Cafaggio. Our guests were treated to a journey through history with a castle tour, followed by a tasting of our local excellence.

​The highlight? Watching them get their hands floury with the wonderful Chef Simona, mastering the art of hand-made pasta. From the first knead to the final bite, it was a celebration of friendship and heritage. 🍷👩‍🍳

​These golden clusters are harvested directly from the ancient acacia trees surrounding our castle. It’s a 0km recipe that captures the soul of the Tuscan countryside in every crunchy bite.

​✨ The Mini Recipe:
​1️⃣ Harvest: Pick fresh, fragrant acacia clusters (don't wash them, just a gentle shake!).
2️⃣ Batter: Whisk flour with ice-cold sparkling water for a light, airy texture.
3️⃣ Fry: Dip the clusters in the batter and fry in hot oil until perfectly golden.
4️⃣ Enjoy: Serve hot with a dusting of powdered sugar.
