Lorenzo Monaci tends the orchards and beehives at Il Borro; it is more than a profession, it is a way of looking at the world. To touch the earth, to gather what it gives, is to pass down a legacy: seeds older than memory, carried forward one harvest at a time. Among them, the Zolfino bean: thin-skinned, hazelnut-flavored, born of tradition yet entirely at home on a contemporary plate. Every ancient variety we preserve is a flavour we might otherwise have lost, and a piece of this land that travels home with those who taste it. An act of faith that lasts over time.

Lorenzo Monaci si occupa degli orti e delle api a Il Borro; non solo come lavoro, ma come uno sguardo sul mondo. Toccare la terra, raccogliere ciò che dona, significa tramandare un'eredità: semi più antichi della memoria, portati avanti un raccolto alla volta. Tra questi, il fagiolo Zolfino: buccia sottile, sapore nocciolato, nato dalla tradizione eppure perfettamente a casa nei piatti contemporanei. In the final days among the vines, there is a particular bond with the land that reveals itself, when the last clusters are gathered and a year of work comes to rest in the cellar.

At Il Borro, the harvest has drawn to its close, grape by grape, row by row, at the vineyard's own pace.

Now the leaves begin to turn and the land settles into its quieter season, already preparing for the next.

Here, time is measured in cycles, in the quiet celebration of what the land has given, and of what it will give again.

Negli ultimi giorni tra i filari c’è un legame particolare con la terra che si rivela, quando si raccolgono gli ultimi grappoli e un anno di lavoro trova riposo in cantina.

A Il Borro la vendemmia si è conclusa, acino dopo acino, filare dopo filare, secondo il ritmo della vigna.

Ora le foglie iniziano a cambiare colore e la terra si affida alla sua stagione più silenziosa, già in attesa della prossima.

Qui il tempo si misura in cicli, nella quieta celebrazione di ciò che la terra ha donato, e di ciò che tornerà a donare.
