Uno chef. Una masseria. Una sola sera.

Per una straordinaria serata di settembre, gli uliveti della Puglia si arricchiscono di un tocco di spezie.

Lo chef londinese Som DasGupta prende il controllo della cucina di Masseria Elysium per un’esperienza di cucina indiana contemporanea, creata appositamente per la Puglia.

Non la solita cucina indiana da curry house.
Non cucina italiana con una spolverata di garam masala.

Cucina indiana moderna, radicata nei sapori regionali e reinterpretata attraverso una raffinata sensibilità fine dining.

Gamberi all’Amritsari con yogurt allo zafferano.

Branzino con cocco e foglie di curry.

Kosha Mangsho brasato lentamente, con midollo affumicato.

Crocchetta di barbabietola con purè di patate affumicato al mango e senape.

Ananas bruciato, gelato al cocco e halwa alla menta e zafferano.

E budino di carote con gelato al dulce de leche e pistacchi canditi.

Il tutto servito nella cornice, decisamente difficile da ba***re, di una masseria pugliese circondata dagli ulivi.

For one extraordinary September evening, the olive groves of Puglia are getting a little more spice.

London-based Chef Som DasGupta takes over the kitchen at Masseria Elysium for a contemporary Indian dining experience created especially for Puglia.

Not curry-house Indian.
Not Italian food with a sprinkle of garam masala.

Modern Indian cooking, rooted in regional flavours and reimagined through a fine-dining lens.

Think Amritsari prawns with saffron yoghurt.

Branzino with coconut and curry leaf.

Slow-braised Kosha Mangsho with smoked bone marrow.

Beetroot croquette with smoked mango-mustard potato purée.

Burnt pineapple, coconut gelato and saffron-mint halwa.

And carrot pudding with dulce de leche ice cream and candied pistachio.

All served against the rather inconveniently beautiful backdrop of a Puglian Masseria.
