For one extraordinary September evening, the olive groves of Puglia are getting a little more spice.
London-based Chef Som DasGupta takes over the kitchen at Masseria Elysium for a contemporary Indian dining experience created especially for Puglia.
Not curry-house Indian.
Not Italian food with a sprinkle of garam masala.
Modern Indian cooking, rooted in regional flavours and reimagined through a fine-dining lens.
Think Amritsari prawns with saffron yoghurt.
Branzino with coconut and curry leaf.
Slow-braised Kosha Mangsho with smoked bone marrow.
Beetroot croquette with smoked mango-mustard potato purée.
Burnt pineapple, coconut gelato and saffron-mint halwa.
And carrot pudding with dulce de leche ice cream and candied pistachio.
All served against the rather inconveniently beautiful backdrop of a Puglian Masseria.
