360 g Riso carnaroli

140 g Burro

100 g Parmigiano Reggiano DOP

1.5 l Brodo vegetale

50 ml Vino bianco

10 ml Aceto di vino bianco

1 cucchiaio Olio EVO

8 Asparagi

1 cucchiaino Pistilli di zafferano

This year’s wishes are also from one of our sous chefs, Matteo Omarini, who wants to share with you his recipe of an Italian Easter tradition: the Colomba di Pasqua. Serves 8-10 (1kg):

First dough:
230 g Strong white bread flour
115 g Water
80 g Sordough starter or fast-action dried yeast
70 g Sugar
70 g Butter
50 g Egg yolks

Aromatic mix:
20 g Honey
1 Vanilla bean
Zests of lemon and orange

Second dough:
First dough
60 g Strong white bread flour
2 g Malt
60 g Sugar
85 g Egg yolks
3 g Sea Salt
1 Aromatic mix
75 g Butter
25g Melted butter
175 g Candied orange peel or chocolate

Topping:
30 g Almonds
20 g Hazelnuts

Il 16 aprile 2019 ero in giro x Milano, con mia figlia, e poi pranzo al Four Seasons per festeggiare il mio compleanno. Quest'anno non è stato possibile x colpa del virus. Peccato!!! Ci rifaremo!!!

Pranzo al Four Seasons Milano, per festeggiare il compleanno di mia figlia. Per Lei, pranzo senza glutine. Torta di mousse alla nocciola, con tanta panna montata, buonissima, assolutamente senza glutine. Ottimo pranzo e servizio eccellente.
Iniziamo il 2019 con un favoloso Brunch al Four Season Milano. Ottimo cibo, personale gentile e qualificato.
