Many years ago, there was a chicken shop nearby that roasted chicken on a spit once a week. When they started turning the meat over the fire, the aroma of roasting chicken filled the whole street. Parents and grandparents would go to pick up the chicken, served in a steaming paper bag along with a tray of baked potatoes, and then pick up the kids after school. It was the best lunch of the week, eaten half with a fork and half with our hands.
We’ve brought the flavor of those lunches back to the table. We use free-range chicken selected by Alessandro Varesio, raised the old-fashioned way; we brown it until the skin is crispy, transfer it to a cutting board, and carve it up: just like a family meal, just like when your grandparents used to pick you up from school with a hot paper bag in their shopping bag.
You’ll find it on the menu at L’Officina: reservations and the menu are available via the link in our bio.
