The pump-overs are nearly finished... a delicate process that follows the cycle of the yeasts and the life of the w**e.

🇬🇧
Here is one of the many nightly pump-overs performed on fermenting **e: juice is drawn from the bottom of the tank and pumped over the so-called "cap"—the skins floating atop the must—so that the liquid, as it passes through the skins, extracts aromas, colors, and tannins. It is through such meticulous work that w**es of great detail are produced.
