🇮🇹🍄🍷❤️ TOTAL TUSCANY | DAY THREE — TRUFFLE HUNTING, PIENZA & AN EXTRAORDINARY WINEMAKER’S DINNER!

Some days in Tuscany are simply magical, and yesterday was one of them! From hunting for treasures beneath the forest floor to tasting incredible local cheeses and ending the evening with a spectacular five-course w**e dinner, this was a day to remember! ❤️

🍄 OUR MORNING BEGAN WITH A TRUFFLE HUNT!

We headed to the beautiful countryside surrounding Podere Il Casale for one of our favorite Tuscan experiences — searching for fresh truffles!

Before entering the forest, we learned about the fascinating world of truffles, how they grow underground, and the incredible relationship between the truffle hunter and their specially trained dogs.

And then it was time for the hunt! Watching these talented dogs sniff out hidden treasures beneath the soil is something you really have to experience to appreciate.

There’s nothing quite like walking through the Tuscan woods, surrounded by nature, learning traditions that have been passed down through generations.

🐖 Back at the farm, we met some of the resident animals, including a rather impressive pig who seemed perfectly content enjoying his lunch!

🧀 CHEESE, CHEESE & MORE CHEESE!

Of course, no visit to Podere Il Casale would be complete without tasting some of its wonderful farm-produced cheeses!

We enjoyed a beautiful selection of local cheeses, from fresh, delicate varieties to more mature, intensely flavored selections, accompanied by delicious preserves and honey.

This is what farm-to-table really means in Tuscany — knowing where your food comes from, meeting the people who produce it, and tasting the difference!

🌿 NEXT STOP — BEAUTIFUL PIENZA!

One of our absolute favorite little towns in the Val d’Orcia!

Pienza is famous for its Renaissance architecture, breathtaking countryside views, and, of course, its beloved Pecorino di Pienza.

We spent time wandering the charming cobblestone streets, exploring local boutiques, shopping for Tuscan specialties, and soaking up the atmosphere of this gorgeous UNESCO-listed historic town.

A little shopping, a little cheese, beautiful scenery, and wonderful company. What more could you ask for?

🍷 AND THEN CAME THE GRAND FINALE — AN EXTRAORDINARY WINEMAKER’S DINNER AT BORGO SAN VINCENZO!

Our evening featured the magnificent w**es of Arnaldo Caprai, one of Umbria’s most celebrated w**eries, particularly renowned for its Sagrantino di Montefalco.

And WOW, did the culinary team at Borgo San Vincenzo outdo themselves!

Five creative courses, five beautiful w**e pairings, and a culinary journey that took us from Tuscany to Umbria and even incorporated a little international inspiration!

🍤 ZEN-ZERO

We began with delicate scallop tempura, kimchi, and sweet-and-sour pineapple. An incredible combination of textures and flavors!

🍷 Paired with Grecante, Colli Martani Grechetto DOC.

🥩 THE WHITE GIANT

Lightly smoked Chianina beef arrosticini, charred spring onion, and tzatziki.

A beautiful tribute to Tuscany’s famous Chianina cattle, with a creative Mediterranean twist.

🍷 Paired with Vigna Flaminia, Montefalco Rosso DOC 2023.

🥟 BEIJING → ROME, ONE WAY

This was such a clever dish!

Gyoza alla gricia, filled with the flavors of one of Rome’s most beloved pasta dishes, accompanied by melted onion, crispy pancetta, and chestnut honey.

Italian tradition meets Asian technique, and the result was spectacular!

🍷 Paired with Merlot, Umbria IGT 2022.

🍖 NEW OLD SCHOOL

A beautiful interpretation of traditional Tuscan peposo, served with potato and edamame purée and dried fig.

Rich, comforting, and full of flavor!

🍷 Paired with the magnificent Sagrantino di Montefalco 25 Anni Caprai 2021.

🍐 THE THREE P’S — DESSERT!

Pecora ricotta, pear, and pecan.

A wonderful finale celebrating simple ingredients transformed into something extraordinary.

🍷 Paired with Montefalco Sagrantino Passito DOCG.

Beautifully presented dishes, exceptional w**es, thoughtful pairings, and the kind of atmosphere that makes you wish the evening would never end!

A HUGE thank you to the incredible culinary team at Borgo San Vincenzo and to Arnaldo Caprai for such a memorable celebration of Italian food and w**e.

And, as always, the best part was sharing it all with our wonderful Total Tuscany guests. The laughter, the conversations, the discoveries, and the friendships developing around our table are what make these experiences so special.

🇮🇹🍷❤️ TOTAL TUSCANY | DAY TWO — A LITTLE BIT OF EVERYTHING WE LOVE ABOUT TUSCANY!

What a beautiful day in the Val d’Orcia! The kind of day that reminds us why we love calling this little corner of Italy home and sharing it with our guests. ❤️

🍷 Our morning began at Castiglion del Bosco, enjoying magnificent Brunello di Montalcino w**es, breathtaking vineyard views, and a wonderful farm-to-table lunch. Great food, exceptional w**e, and even better company!

🌿 On our way home, we made a few of our favorite stops throughout the Val d’Orcia — the iconic circle of cypress trees near San Quirico d’Orcia, the famous Gladiator filming location, the beautiful Church of San Biagio, and a little exploring in Montepulciano. Everywhere you turn, another postcard!

🍽️ And then came dinner at Borgo San Vincenzo… WOW!

Honestly, Chef deserves TEN STARS for this meal! ⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️⭐️

We began with the most delicate stuffed zucchini flower filled with spinach and ricotta, topped with a local anchovy. Just beautiful!

Then came an extraordinary menu celebrating the flavors of Tuscany:

🍅 Heirloom tomato filled with creamy burrata stracciatella, slow-simmered tomato, fresh basil, and crispy artisan bread.

🍝 Delicate handmade bottoni pasta stuffed with rabbit alla cacciatora, served with a lightly smoked tomato consommé, olives, and capers.

🍒 Perfectly seared wild boar medallions with agresto-marinated cherries, accompanied by fresh greens.

🍋 And for dessert? A lemon and white chocolate cheesecake with strawberry and basil ragù that was quite literally HEAVEN IN YOUR MOUTH! I don’t think a single person at our table wanted that dessert to end! 😂❤️

Of course, beautiful Italian w**es accompanied every course, and the evening was filled with wonderful conversation, laughter, and the kind of moments that make traveling together so special.

A huge thank you to the incredible culinary team at Borgo San Vincenzo. What a spectacular dinner and such a beautiful celebration of local Tuscan ingredients.

This is what Total Tuscany is all about. Not just visiting Italy, but slowing down, tasting it, experiencing it, and making memories around the table.

🍂🇮🇹 TOTAL TUSCANY FALL HARVEST WEEK — DAY ONE IN THE BOOKS! 🍷❤️

A little rain, a little romance, and a whole lot of Tuscan magic!

The Val d’Orcia gave us one of those wonderfully moody autumn days when storm clouds dance across the hills, the countryside turns a hundred shades of green, and the mist settles over the vineyards and cypress trees. There is something incredibly beautiful about Tuscany in the rain, especially during harvest season.

And we knew exactly how we wanted to spend it!

♨️ A DAY OF PURE RELAXATION AT ADLER SPA RESORT THERMAE

Our first full day together was dedicated to something we believe every Italian vacation should include: the beautiful art of slowing down.

We headed to the magnificent ADLER Spa Resort Thermae in Bagno Vignoni, tucked into the heart of the UNESCO World Heritage landscape of the Val d’Orcia.

Imagine swimming outdoors in naturally warm thermal waters while the cool autumn air brushes your face, looking out across rolling Tuscan hills as the clouds drift by.

Heaven!

Our guests enjoyed a beautiful day of thermal pools, soothing massages, rejuvenating facials, wellness experiences, and plenty of time to simply relax.

We shared a wonderful lunch together, enjoying delicious food, conversation, and the pleasure of having absolutely nowhere else we needed to be.

And then there was the salt grotto, where we floated our cares away in the peaceful, mineral-rich water. Weightless, relaxed, and completely removed from the outside world.

Sometimes the most memorable part of a vacation is not what you see, but how a place makes you feel.

No rushing. No crowded sightseeing schedules. Just relaxation, laughter, friendship, and the luxury of being completely present.

🍷🔥 A TUSCAN BARBECUE & AN EVENING WITH LE BÈRNE WINERY

After a wonderfully relaxing afternoon, we returned to our beautiful home for the week, Borgo San Vincenzo, where a spectacular Tuscan barbecue and w**e dinner awaited us.

And what an evening it was!

Beautifully prepared Tuscan food, wonderful local w**es, a welcoming table, and the kind of atmosphere that makes you wish the evening would never end.

We were especially delighted to welcome our dear friend Federico Fastelli from Le Bèrne W**ery, a wonderful family-owned estate in Cervognano, just outside Montepulciano.

The Natalini family’s w**emaking story began in 1967, when Giuliano Natalini and his father Egisto established the foundations of the w**ery. Today, multiple generations continue that tradition, producing expressive w**es that reflect the character and heritage of Montepulciano.

Federico represents the next generation of this beautiful family story. Having studied viticulture and enology and gained experience in places as far away as New Zealand and Burgundy, he brings both international knowledge and a deep love for the vineyards where his family has spent generations cultivating grapes.

And that’s what makes an evening like this so special.

It’s not simply having a glass of Vino Nobile di Montepulciano. It’s meeting someone whose family has dedicated their lives to making it.

It’s learning that their Vino Nobile is made from 100% Sangiovese, that their vineyards grow in the distinctive soils of Cervognano, and that their philosophy begins with the belief that exceptional w**e is made first and foremost in the vineyard.

It’s understanding the difference between simply tasting a w**e and discovering the people, the traditions, the landscape, and the generations of dedication behind every bottle.

Le Bèrne produces a beautiful collection of w**es, including Vino Nobile di Montepulciano, Riserva, Rosso di Montepulciano, and other wonderful expressions of the region.

But the best part of sharing local w**e with our guests is always the conversation.

Stories are exchanged. Questions are asked. Glasses are raised. And suddenly, the people sitting around the table feel less like a tour group and more like old friends enjoying dinner together in Tuscany.

❤️ THIS IS THE TOTAL TUSCANY WE LOVE.

For Phil and me, creating these experiences has never been about how many places we can squeeze into a day.

It’s about knowing when to slow down.

It’s about a rainy afternoon spent floating in warm thermal waters, a long lunch with new friends, and a beautiful evening sharing food and w**e with someone who actually grew up among the vineyards you’re learning about.

It’s about introducing our guests to the people who make Tuscany extraordinary.

The w**emakers. The chefs. The families. The artisans. The people who keep generations of Italian traditions alive.

Because Tuscany isn’t just somewhere you visit.

It’s somewhere you experience, through its landscapes, its flavors, its people, and the friendships you take home with you.
