In Naples it is not possible to decline the pasta with less than 6 recipes: scarpariello, genovese, ragù rosso, potatoes and provola, clams (veraci!), octopus! and I recommend it: for the Genoese the ziti are necessary, for the clams and the polyp the spaghetti (and not the vermicelli !!) are rigorous, with the potatoes the tubettoni must be used, with the scarpariello you have to use the vermicelli....and with the ragù you need o'maccherone!!
