This stuffed pasta has been a staple of local kitchens for generations, tied to the valley's farming rhythms and cold-weather comfort food.

Our Executive Chef Aggeliki Charami took on the challenge of veganizing this beloved classic - and rather than settling on one version, she created two. At dinner, you'll find pasta filled with spinach and cashew cream cheese, finished in brown butter with sage and lemon, alpine herbs, a dusting of carob bread powder, roasted strawberries and crispy capers — sweet, earthy and sharp. At lunch, a different interpretation awaits, built around its own balance of textures and flavor.

Warm cinnamon rolls straight from the oven, Sicilian cannoli, bright seasonal fruits, and pastries you’ll want to photograph before you touch them.
