It's called Ferragosto, and it has been sacred here since the Romans invented an excuse to rest. At the Masseria, we still honour it exactly that way: no plans, no schedules, just a pool, a merciless August sun, and the particular stillness this country has protected for two thousand years.

Frisella — noun /friˈzɛlla/
A ring of durum wheat bread, baked twice over open flame, born centuries ago from a simple need: bread that could survive weeks in the fields without spoiling.
Softened with a splash of water.
Dressed with ripe tomatoes, crushed by hand. Finished with olive oil and a pinch of oregano.
Here at the Masseria, nothing on that plate has travelled far.
The tomatoes come from our own gardens. The oil from our own olive groves. Even the flour begins as wheat grown on this same land, harvested and milled the way it always has been. What was once a farmer's survival food has become, unchanged, one of Puglia's great pleasures.
