Born in nearby Luco di Mugello, Fra Angelico’s artistic identity was forged in these landscapes. His masterpiece, the Pala, was commissioned for the Convento di Bosco ai Frati—an architectural gem designed by Michelozzo and the favored spiritual retreat of Cosimo de’ Medici.

These hills have shaped the eye and imagination of some of Italy’s greatest artists. Donatello, Fra Angelico, and even Giotto — born here in the Mugello — all worked in and around this land, guided by the same light, the same silence, the same rhythm of countryside that surrounds Schifanoia today.

Our Countryside Painting Class, led by one of our resident artist, invites guests into that lineage. You sit beneath the poplars or near the Anguidola River, sketchbook open, watching the valley the way the masters once did: slowly, deliberately, letting the landscape reveal its colors.

Each villa at Tenuta Schifanoia has its own wood-burning oven — the same kind farmers used here in the 18th century to bake their daily bread. Today, those ovens return to life for our fresh pizza–making class, one of the most joyful experiences on the estate.

Every pizza begins with flour made from grains grown on our 1,500-acre organic estate, farmed without pesticides or chemicals. We mill a curated blend of heritage wheats — Verna, San Pastore, Sieve, and Inallettabile — giving the dough a flavour that belongs entirely to the Mugello valley.

Guests gather around the fire, shaping dough by hand, adding vegetables from the garden and local cheeses. When the pizza emerges from the oven with a blistered crust and warm, fragrant aroma, it carries centuries of tradition in a single bite.

The Sieve River, born in the Apennine mountains, flows clear and cold through the Mugello valley before joining the Arno on its way to Florence. Along its quiet bends, surrounded by willow and alder, you’ll find one of Tuscany’s most beautiful places for fly fishing.

Here, under the surface, live wild brown trout — a sign of the river’s purity and of the protected environment that defines our valley. The water that feeds the Sieve is the same mountain spring water that nourishes our organic fields of wheat, spelt, sunflowers, and alfalfa. A landscape farmed without pesticides, herbicides, or chemicals, creating an ecosystem where nature remains perfectly in balance.

White truffles are among the rarest ingredients in the world — not because they’re hidden, but because they grow only under precise natural conditions. They require pure water, the right soil, the right altitude, and most importantly, the roots of specific trees: poplar, oak, willow, hazel.

At Tenuta Schifanoia, these elements converge in a way found almost nowhere else in Tuscany. The Anguidola River, born in the Apennine mountains, feeds the estate with fresh spring water. Along its banks, and through our historic poplar viale, the trees form the perfect symbiotic environment where white truffles develop — quietly, season after season.

Stefano walks this corridor of poplars with Birba and Prugna, the two dogs whose instinct guides them to the precise points where the roots and soil meet in perfect harmony. When they pause, tails circling, Stefano kneels to reveal the pale truffle beneath the soft riverbank earth — a treasure shaped by water, roots, and time.

The Mugello valley — long known for its forests and fields — is quietly becoming one of Tuscany’s most intriguing wine regions. The altitude, the soil, the clean northern light: conditions once considered too cool for traditional Sangiovese now nurture elegant Pinot Noirs and crisp whites that reflect the precision of this landscape.

At Tenuta Schifanoia, guests can taste a curated selection from our neighbours in Mugello, alongside wines from our family estate, I Veroni in Chianti Rufina — one of the oldest DOCG areas east of Florence, where vines have been cultivated since the 1500s.

Each glass connects two worlds: the cultivated hills of Chianti and the wild open plains of Schifanoia.
