The "Fritola" (frittella in Italian) is the typical dessert of the Venice Carnival and it is ..... a wonderful thing, unique goodness! 😋
In the 1600, making fritole was considered an art, a street craft reserved only for them, the "fritoleri": they were the only ones who had permission from the Republic of San Marco to knead, fry and sell the Fritole during the Carnival period. They had large baskets or skewered pancakes (as can be seen in the 1755 painting by Pietro Longhi - exhibited in the museum of Cà Rezzonico 🏛️) in order not to grease their fingers and not to burn themselves. We instead lick our fingers and mustache too !!!!👅😋😋
Delicious recipe for the batter: eggs, flour, milk, sugar, raisins and pine nuts.
They can be empty or filled with: Chantilly cream, zabaglione, chocolate, pistachio, apples, ricotta.
You cannot come to Venice during the Carnival and not taste them! Each pastry shop has its own special fritola, we also queue for those in Tonolo!
