, fondatore dell’Acetaia, a Rapallo, durante una cena al Ristorante Montallegro:
assaggi al cucchiaio, uno per uno, per raccontare cosa significano tempo, concentrazione e attesa.

Una degustazione che ha preceduto la cena firmata dallo chef Giovanni Longo, costruita come un dialogo tra piatti e invecchiamenti:

– Uovo CBT, crema di patate e crostini — Riserva 50
– Melanzane e radicchio — Vivace 03
– Risotto con capesante e cipolla di Tropea — Stravecchio 25
– Tonno in crosta di pistacchio — Affinato 12
– Cioccolato fondente e amarene — Gustoso 08

Non una presentazione.

We literally had no more room for boxes.
This order to the United States will carry overseas more than a hundred bottles of Traditional Balsamic Vinegar of Modena PDO (together with other top products).
Who will be the lucky ones to discover this concentrate of history, patience, wood… and nothing but cooked grape must?

Non avevamo letteralmente più spazio per altre scatole. Questo ordine per gli Stati Uniti porterà oltreoceano oltre cento bottiglie di ABTM DOP (insieme ad altri prodotti top). Chissà chi saranno i fortunati a scoprire questo concentrato di storia, pazienza, legno… e solo mosto d’uva cotto.

Penultimo lunedì di luglio. In acetaia fa caldo, e l’aria profuma di mosto cotto e legno.
Le botti lavorano in silenzio, noi ci prepariamo alla pausa.

Siamo qui ancora qualche giorno, poi ci rivediamo il 25 agosto.
Ultimi giorni per accendere l’estate: capresi, lamponi, insalate — c’è un Bonini per tutto.

Second-to-last Monday of July. It’s hot in the acetaia, and the air smells of cooked must and wood.
The barrels do their quiet work, and we’re getting ready for a well-earned break.

We’re here for a few more days — back on August 25th.
