Flower of the Oil

Very few olive oils use this extraction process. Instead of being pressed, harvested olives are crushed and then strained so that the oil ("Flor de Aceite" or "Flower of the Oil") drips out naturally rather than being forcefully expelled.

The main aim of our website is to introduce our two estates: Majdal which is mountainous, Mediterranean and terraced, where we produce our extra-virgin olive oil, besides almonds, figs, pomegranates and walnuts; and Gedara, which is flat and semi-tropical, where we produce dates, citrus and pecans. In both farms we employ agricultural practices designed to create an environment-friendly and sustainable agricultural production.

Naturally we hope that some of our products will reach a discerning clientele through this website. But, beyond this, we will feel rewarded if we can give you a fleeting introduction to Jordan, its land and agriculture, its rich history and beautiful scenery.

Single estate: Inimitable Taste

One of the main advantages that Majdal enjoys is that unlike many other producers of olive oil, Majdal Olive Oil is produced from a single family estate and hence there is complete control over all stages of production and quality of the fruits.

23 of the best local and international olive varieties were selected by the owners for production. Among the local varieties are Qanabisi and Souri, Kalamata and Koroneiki from Greece, Arbequina and Empltre from Spain, Tanche from France, and Frantoio and Leccino from Italy.
The use of a myriad of superior varieties provides interesting possibilities for the production of a complex, tasteful and unique olive oil.
A full list of the varieties and their qualities can be found here:

Production: Picking Process

Superior quality olives have a tendency towards alternate-bearing and are difficult to pick. Additionally, most varieties are grafted onto wild olive trees, notwithstanding that they grow very slowly. This was done as an extra guarantee against the need to use pesticides since varieties grafted onto wild trees have greater resistance to drought and pests.
Opting for quality rather than quantity brings additional difficulties for production, but the owners of Majdal have historically adapted to the eccentricities of farming superior olives.

Artisanal: The Story

Majdal ensures quality by following traditional processes: such as the diversification of olive varieties; utilizing the cold press technique; and hand-picking olives for immediate processing.
This artisanal technique is completed with high tech milling and bottling techniques: guaranteeing quality and purity in an all natural product.

This fine olive oil is best appreciated on its own, on a piece of bread, on salads, or with Mediterranean foods such as pasta and mezzes. The oil can also be flavored following traditional techniques of marination.

Majdal: The Land.

Comprising around 1,200 acres of land and located between 300-720 meters above sea level: the Majdal estate is planted with some 30,000 olive trees of which 22,000 are in full production.

The area which is mountainous receives a large amount of winter and spring rain, lending to a robust cultivation of fine olive trees. In hot summers there are two supplementary irrigations from an artesian well on the estate, however, for all practical purposes the olive trees are rain-fed.
Altitude, lack of humidity and the absence of summer rain all mean that the Mediterranean fruit fly and other pests do not pose any real problems. No pesticides have ever been used.

Aside from olive trees, the estate is also home to ancient oak and pine trees; as well as fig, almond, walnut and pomegranate trees.

The production of olive oil in the Ajloun mountain range in North Jordan since biblical times, has been attested by both historical and archaeological evidence.

Situated on the foothills of the Ajloun mountain range, near the ancient Roman town of Gerasa, the Majdal estate has been producing olive oil since it’s establishment in the 1960’s, by the late Shawkat Al Khasawneh.

Importing seedlings from Italy, Spain, Greece and Turkey to supplement the excellent local varieties, this single estate is one of the last remaining artisanal olive oil producers in the region.

Majdal is the true taste of a timeless tradition, flavored by history and produced with the art of experience.
