Here's a really simple recipe for chicken from our kitchen.

Ingredients:
200 g chicken breasts, b***d and skinned
20 g white wine
30 g lemon juice
2 cloves fresh garlic
50 g butter


Method
Heat the butter with the garlic in a large skillet
Add the chicken and brown for 5 minutes each side.
Add the white wine and lemon juice and simmer for a further 5 minutes
Serve with potatoes and sautéed vegetables.

We all love Spaghetti Bolognese. Here is a simple recipe from our chef.

Ingredients:

200 grams spaghetti
1kg chopped tomatoes
350 grams beef mince
2 onions onion (medium size, 160g each)
2 3/4 cloves fresh garlic (medium size, 3g each)
3/4 teaspoons salt
2 teaspoons dried oregano
3/4 teaspoons ground black pepper
80 grams olive oil
40 grams grated parmesan cheese

Method
Heat the oil in a large frying pan and sauté the vegetables, onion and garlic for 10 minutes, until soft.
Transfer to a blender and add the tomatoes then blend until smooth.
Add the mince and fry over a medium heat.
Add the tomato and vegetable sauce to the mince then stir in the tomato puree, ketchup, stock and oregano. Bring to a simmer and cook for 30-35 minutes until the sauce is thick
Add salt and pepper.
Bring the water to a boil. Add the olive oil and salt, then the spaghetti and boil for around 10 minutes, until slightly firm.
Drain and toss with the minced beef sauce.
Serve with parmesan cheese and some chopped basil.

We have persuaded chef to share some of his favourite recipes and here is a simple one to start with:

Fish fillets in lemon butter sauce:

Ingredients:
200 g fish fillet
20 g butter
50 g lemon juice
20 g diced onion
Salt and pepper
3 tbs chopped parsley

Method
1. Melt half of butter in a large frying pan on medium heat. When starting to sizzle, add fish fillets and cook for 2 minutes each side, until tender and golden. Remove to warm plates.
2. Add remaining butter, diced onion and lemon juice to pan, increase heat to high and stir for 1 minute, until combined. Stir through parsley and spoon over the fish. Serve with potatoes and steamed vegetables.
