【ホテルオリジナル日本酒】
200年を超える歴史を刻む、大分県日田市の井上酒造とANAインターコンチネンタル別府リゾート＆スパのスタッフが、田植えから仕込み、ラベルデザインまで、共同で手がけたホテルオリジナルの純米吟醸酒「風・KAZE」と「流・NAGARE」がついに完成し、お披露目会が執り行われました。

蔵前に広がる田んぼで育てられた酒米「雄町（おまち）」を使い、醸造水には、英彦山系を分水嶺とし耶馬溪層の火山岩を幾年もかけてくぐり抜けた清冽な水を地下150mから汲み上げ、その水を田へと引き込み酒米を育てます。

森から生まれた水が米を育て、酒となって人へと巡る。 この『水の循環』こそが、この酒に宿る特別な物語。

自然の循環と蔵人の技、そして私たちの願い、そのすべてが溶け合った、ここにしかない物語を、この一杯の中に感じてください。

【Hotel Original Sake】
A collaboration between Inoue Shuzo, a historic brewery in Hita City, Oita Prefecture with over 200 years of heritage, and the team at ANA InterContinental Beppu Resort & Spa has created two original Junmai Ginjo sakes: KAZE and NAGARE. From rice planting and brewing to bottling and label designing, every step of the process was carried out together, culminating in a celebratory launch event.

The sake rice, Omachi is cultivated in the rice field that stretches in front of the brewery. The pure and crystalline brewing water is drawn from 150 meters underground that has journeyed for years through the volcanic rock layers of Yabakei, divided by the watershed of Mount Hiko. This water is first guided into the fields to nurture the rice, and later drawn again to brew the sake. It is this sacred “Circulation of Water” that forms the very narrative dwelling within each bottle.

As the circulation of nature, the craftsmanship and our shared aspirations have dissolved into one. Within this glass, may you discover a story that exist only here.

A one-night-only collaboration dinner was held at a five-star resort set high above the sky.

Yusuke Akasaka, owner-chef of La Maison Confortable in Azabu-Juban, Tokyo joined with Chef Miyoshi of Sushi Musi to bring together two worlds of gastronomy for an extraordinary evening.
