Fallen leaves that blanket the forest in autumn mark the beginning of a new cycle. Slowly broken down by microorganisms, they return nutrients to the soil, nourishing the plants that will grow next.
The katsura tree on the terrace of SARUYA SHIN SHIN also sheds its leaves in autumn, filling the surrounding air with a sweet fragrance.
In this edition of yamayama Tea Gathering, we turn our attention to the aromas and flavors found in the leaves, branches, flowers, and fruits of plants, beginning with this very tree.
Our guest is HERBSTAND , who explores the potential of plant materials that are often overlooked in everyday cooking, from leaves and branches to flowers and fruits.
During the gathering, we will taste three teas made from katsura leaves at different stages of fermentation, discovering how their aromas and flavors change as the seasons shift—from fresh green leaves to autumn foliage and finally fallen leaves.
Beneath the katsura tree, surrounded by the sweet fragrance of autumn, join us for an afternoon of discovering the familiar plants around us from a slightly different perspective.
