さらに、この時期にしか出合えない、京都産の希少な「花山椒」を贅沢に添えました。
ふわりと広がる、花山椒の爽やかな香りと繊細な刺激が、春の訪れを告げてくれます。
シャキシャキの新玉ねぎと花山椒をお肉でそっと巻いていただくのが、当館おすすめの愉しみ方。
仕上げに、大根おろしに卵黄と酢を合わせた自家製の「黄身おろし」をたっぷりと。

This month, we are proud to present our "Omi Beef Suki-Shabu Style"—a dish brimming with the deep, savory umami of the season.
Our melt-in-your-mouth Omi beef is paired with the crisp sweetness of fresh spring onions. To elevate this dish, we have added the seasonal-limited Kyoto Hanasancho (Japanese pepper blossoms). Available only for a fleeting moment each spring, these tiny blossoms release a refreshing citrus aroma and a delicate, tingling sensation that signals the true arrival of the season.
Our Recommended Way to Savory:
Once the broth begins to simmer, lightly swish the beef through the pot. We suggest wrapping the meat around the crunchy spring onions and the fragrant Hanasancho blossoms for a perfect harmony of textures.Finish each bite with a generous dip into our handcrafted "Kimi-oroshi"—a bright, zesty blend of grated daikon radish, egg yolk, and a hint of vinegar. This golden accompaniment beautifully balances the rich richness of the beef, leaving a clean and refined finish.
