幻の赤玉ねぎ「足摺レッド」

太平洋を望む、高知県土佐清水市。

この地で、鮮やかな赤紫色の皮と、驚くほどの甘みを持つ赤玉ねぎ
「足摺レッド」を育てているのが、生産者の早川五月さんです。

早川さんが取り組んでいるのは、必要最低限の水と肥料で、
野菜が本来持つ力を引き出す「永田農法」。
厳しい環境の中で、足摺レッドは土の奥深くまで根を伸ばし、
糖度8度、時には10度を超えるほどの濃厚な甘みと旨味を蓄えていきます。

しかし、高温多湿な土佐清水の気候での栽培はとても難しく、
現在、永田農法で足摺レッドを育てている生産者は、早川さんただ一人。

約3,000本もの苗を管理し、一つひとつの様子を見ながら、
まるで話しかけるように大切に育てています。

効率や収穫量だけでは生み出せない、一玉に凝縮された力強い味わい。
土佐清水の風土と、早川さんの情熱が育てる「幻の赤玉ねぎ」。

Overlooking the Pacific Ocean lies Tosashimizu City in Kochi Prefecture.
Here, farmer Satsuki Hayakawa grows “Ashizuri Red,” a red onion known for its vivid reddish-purple skin and remarkable sweetness.
Ms. Hayakawa uses the Nagata farming method, which brings out the natural strength of vegetables by providing only the minimum amount of water and fertilizer they need.Under these demanding growing conditions, the onions send their roots deep into the soil, developing a rich sweetness and umami flavor. Their sugar content typically reaches 8 degrees Brix and sometimes exceeds 10.
However, cultivating Ashizuri Red onions in Tosashimizu’s hot and humid climate is extremely challenging. Today, Ms. Hayakawa is the only farmer growing them using the Nagata method.She carefully tends approximately 3,000 seedlings, observing each one closely and nurturing them with such care that it is almost as though she is speaking to them.The result is a powerful, concentrated flavor that cannot be achieved by prioritizing efficiency or yield alone.“Ashizuri Red,” the legendary red onion, is nurtured by the natural environment of Tosashimizu and Ms. Hayakawa’s passion.Read the full interview with the producer on our official website, TOSA made.
