旬を迎えるスズキの繊細な旨味とフェンネルの清涼感と柑橘の酸味が重なる「鱸のカルパッチョ仕立て」は、静岡県産のパッションフルーツのソルベが添えられ、溶けていくソルベがドレッシングに変わっていく過程も楽しめる１品。
もう１品は、日本一高い富士山と日本一深い駿河湾を共有する静岡の地形からインスパイアされたサーフ＆ターフとなる「和牛フィレとロブスターテールのグリル」。スモークパプリカと唐辛子のバターソースが心地よいアクセントとなります。

The Sea Bass Carpaccio layers the delicate umami of peak-season Japanese sea bass with the refreshing notes of fennel and citrus. Served with a Shizuoka-grown passion fruit sorbet, the dish evolves as the sorbet slowly melts into a vibrant dressing—an experience to savor until the very last bite. Also featured is a surf-and-turf inspired by Shizuoka’s unique geography, home to Japan’s highest mountain, Mount Fuji, and its deepest bay, Suruga Bay. The Grilled Wagyu Tenderloin and Lobster Tail is accented with a smoked paprika and chili butter sauce, adding a gentle yet memorable kick.
