We are looking for team members for Lodge Scole (Zao Onsen, Yamagata).

Scole is a European classic ski lodge with a warm and refined atmosphere.
We welcome guests who appreciate quality, culture, and respectful communication.

While we usually maintain a calm and comfortable environment, we also enjoy lively moments such as events and gatherings.

厨房は、常に清潔に。
それは、23年間お嬢様育ちだった母が、今もなお大切にしている教えです。
母は現在82歳。
この4月で83歳になりますが、今も元気に健在です。
ただ、厨房に立って料理をすることは少しずつ引退し、今はご隠居のような立場に。
創業当初、この厨房は山形の地元シェフの方々に支えていただいていました。
そしてバブルが弾ける前までは、キハチをはじめ関西の有名店で腕を振るったプロのシェフたちが、この厨房でお客様に料理を提供してくれていました。
その後、そのバトンを母が受け取り、主婦ならではのアイデアで日々のメニューを支えてきました。
そして今。
再びこの厨房には、エグゼクティブシェフを務めていたパートナーをはじめ、私たちの仲間たちが入り、共にこの場所を支えてくれています。
そんなプロのシェフたちでさえ、
「ここまで厨房を綺麗に保てる人はなかなかいない」
と言うほど。
たとえ美味しい料理が出てきても、
厨房が汚れているレストランには、次は行きたいとは思えない。
そんな感覚も、この教えの延長線にあるのだと思います。
だからこそ、スコーレでは
“見えない部分こそ丁寧に”を大切にしています。
汚れたままでは、どんな良い道具も本来の力を発揮できない。
この教えだけは、これからも守り続けていきたい。
今日もまた、一つひとつ丁寧に、厨房を整えています。
その先にある一皿を、
安心して楽しんでいただけるように。

A clean kitchen, always.
This is a value my mother has carried with her her entire life.
She is now 82, turning 83 this April—
still healthy and full of life.
While she has stepped back from cooking,
she now watches over the kitchen with quiet pride.
In the early days of Lodge Scole,
local chefs from Yamagata supported this kitchen.
Before the economic bubble burst,
professional chefs—from well-known restaurants in Kansai, including Kihachi—
worked here, serving guests with skill and pride.
After that, my mother took over,
bringing her own creativity and dedication into every daily menu.
And now

this kitchen is once again supported by a new generation,
including my partner, a former executive chef,
along with the team and friends who stand with us today.
Even those professional chefs would say,
“It’s rare to see a kitchen kept this clean.”
No matter how delicious the food is,
if the kitchen is not clean, it makes you hesitate to return.
That belief lives on here.
At Scole, we value what you don’t see
just as much as what you taste.
Because only in a clean, cared-for space
can tools, ingredients, and people truly perform at their best.
This is a lesson I will always continue to honor.
Today again, I carefully clean the kitchen, one step at a time

for the plate that will soon be in front of you.
