The women behind our kitchen!
Chef Chun has been at Maison Polanka since our opening in 2012. Before that, she had been the family cook of dear friends at the École française d’Extrême-Orient in Siem Reap.
Chun has an extraordinary instinct for food. Once, I described to her the taste of a Cambodian fondue that my mother used to cook and whose recipe had been lost. From that memory alone and a list of ingredients, she recreated it until it tasted exactly right - and she achieved it in 2 trials only 😮
That is very much how we work together — exchanging ideas, tasting, adjusting, sometimes rediscovering. And always having fun along the way.
Chun brings an incredible energy and joy to the kitchen and the team.
Heang joined us eight years ago. Originally from Ratanakiri, she trained at EGBOK, an NGO-supported hospitality school. Thoughtful, curious and beautifully educated, she speaks and writes excellent English and has become an essential part of the team.
Sophea arrived around the same time. Quieter and wonderfully discreet, over the years she has found her place — and, importantly, learned that sometimes it is perfectly all right to say no.
Three very different women.
Three personalities.
One kitchen they have made their own.
