Rest is not a luxury, it’s something we’ve forgotten how to prioritise.

Breakfast in the canopy of the trees.

At Rosyth Estate House, mornings begin above the jungle floor — sunlight filtering through leaves, birds calling from the treetops, and the scent of fresh hoppers rising gently from the kitchen.

A perfectly lacy hopper.
A golden egg at its centre.
Pol sambol bright and fiery on the side.

This is Sri Lanka at its simplest and most soulful.

There is something deeply grounding about starting the day here — seated among the trees, eating with your fingers, tasting coconut, spice and warmth while the world below moves slowly.

Walking through our rubber fields yesterday, our estate manager stopped, bent down, and gently unearthed these — wild fern shoots, foraged just steps from Rosyth Estate House.

By evening, our chefs had turned them into a beautiful forest mallung — tossed with dried sprats, fresh coconut and a whisper of chilli.
Simple. Ancient. And impossibly delicious.

These tender fern curls have been cooked in Sri Lankan homes for generations. Like all wild greens, they are always properly cooked — never eaten raw — allowing their earthy, nutty flavour to shine while making them perfectly safe to enjoy.

This is what eating from the land looks like at Rosyth:
quiet, seasonal, and deeply connected to the estate around us.

Goraka: The Smoky-Sour Heart of Sri Lankan Cuisine

If you’ve ever tasted an authentic fish ambul thiyal, that sharp, smoky sourness lingering on your tongue comes from one ingredient: goraka.

This small, dried fruit is the soul of Sri Lanka’s beloved sour fish curry. Dark, wrinkled, and almost charred-looking, goraka may not look like much, but it transforms whatever it touches. Unlike lime or tamarind, its sourness is deeper—earthy and almost smoky, as if the fruit carries the memory of fire.

How It’s Made

Fresh goraka pods are sliced, sun-dried, and smoked, intensifying their flavor and giving them that inky black color. They’re usually soaked in hot water before use, then ground into a paste or added directly to curries.

Why It’s Special
• Flavour anchor: It doesn’t just sour the dish; it balances the richness of fish or meat and locks in the flavor.
• Preserving power: In traditional ambul thiyal, goraka acted as a natural preservative, letting fish keep longer without refrigeration.
• Unique taste: No citrus, vinegar, or tamarind can replicate that smoky, savory sourness.

Beyond Fish

While most famous in ambul thiyal, goraka finds its way into other curries and even Ayurvedic remedies, prized for its digestive properties.

🐒🥥 Monkey Business at Rosyth
We’re constantly amazed by the ingenuity of our jungle neighbours. These clever monkeys manage to strip the husk and pierce the coconut just enough to sip the sweet water inside — no tools, just instinct (and persistence!).

Yes, we do grumble about losing our coconuts… but you have to admire their skills!

🐒 How Monkeys Open Coconuts
1. Observation and Learning
Monkeys are keen observers. They often watch humans and learn from one another. Young ones mimic elders, passing coconut-opening skills through generations.
2. Peeling the Husk
Using sharp teeth and strong hands, they bite and tug at the fibrous husk. It can take several minutes, but they’re patient. Sometimes they bash the coconut against rocks or tree trunks to loosen the outer layers.
3. Finding the Weak Spot
Coconuts have three soft “eyes” at one end — monkeys instinctively target these. With repeated biting or poking using a sharp stick or even claws, they manage to pierce a hole just big enough to slurp out a we the water.
4. Sipping the Water
Once the hole is made, it’s heads down — they drink straight from the shell, just like we do with a straw, minus the manners!

Emma’s Chocolate Cake — or as our guests know it, “Choco Lava” 🍫✨

This rich, velvety slice is more than just a dessert — it’s a beloved memory from the Dobbs family kitchen. When our boys were just 3 and 6, a wonderful Swedish au pair named Emma lived with us for a year. As a parting gift, she left us a little book of her favourite recipes. This cake was the one we turned to again and again.

Now, it’s the most popular dessert at Rosyth, simply known as “Coco Lava” on our chalkboard. Come and visit — even if it’s just for the cake! 🍰💛
