Today marks an important milestone in my professional journey as I completed the Pastry & Bakery NVQ Level 04 Final Assessment.

This journey has been filled with learning, dedication, and hands-on experience that strengthened my skills and confidence. I am grateful to my instructors and everyone at HE Hotel School for their continuous guidance and encouragement.

I look forward to receiving my internationally recognized NVQ Level 04 Certificate and taking the next step toward a successful career in the pastry and bakery industry.

We were deeply honored to welcome Mr.Akantha Pandithasekera, The owner and founder of Sponge Pastry Shop in Colombo,as the Guest of Honour at the HE Hotel School Annual Convocation Ceremony.

Chef Akantha Pandithasekera. A former top pastry chef in the hotel industry, he started the business with his wife, Aloma Pandithasekera, in 1985.

The bakery began as a small shop in a garage and has since grown into a massive local institution located at No. 34, Galle Road, Colombo 03. Known for its wide array of sweets, savories, cakes, and lunch menus, Chef Akantha's family-run business remains highly popular for its culturally diverse, inclusive atmosphere and signature items like chocolate mousse, almond crunch, and seafood pies.

We are sincerely grateful to Mr.Akantha Pandithasekera for gracing our Convocation Ceremony as our Guest of Honour and for sharing his valuable insights and experiences with our graduates

Today, we prepared the classic Crêpes Suzette—an elegant French dessert finished with the spectacular flambé technique. This practical session enhanced our skills in crêpe preparation, Suzette sauce making, presentation, and the safe ex*****on of flambéing.
