Her work is present in the balance of the dishes,
in the way flavours are built, and in the timing of each preparation.

She brings knowledge rooted in traditional desert cooking,
shaped by experience and daily practice.

Many of the recipes come from that combination,
between a more structured cuisine and local understanding.

What reaches the table carries that process.

Materials, light and textures are selected to create comfort while maintaining a strong connection with the surroundings.

The structure follows traditional forms, using solutions adapted to the desert climate to regulate temperature naturally.

This reduces the need for artificial systems and keeps the space aligned with its context.

Mohamed prepares it the traditional way, pouring it several times from a height to mix the tea, mint and sugar, and to create its characteristic foam.

It is served in small glasses, often in three rounds, as the flavour continues to evolve.

Across Morocco, the preparation varies by region.
In the desert, it remains closely connected to daily life.

At Madu, this is how tea is still prepared and shared.

Mohamed lo prepara de la manera tradicional, vertiéndolo varias veces desde cierta altura para mezclar el té, la menta y el azúcar, y crear su característica espuma.

Se sirve en vasos pequeños, normalmente en tres rondas, a medida que el sabor evoluciona.

En Marruecos, su preparación varía según la región.
En el desierto, sigue muy ligada a la vida cotidiana.
