There’s not much a coconut palm can’t do.
Across the island, almost every part of the tree finds a purpose. Coir from the husk is woven into ropes, coconut timber appears in woodwork around the resort, and dried palm leaves continue their work overhead as thatched roofs.
In our kitchens, it appears in plenty of dishes too, fitting naturally into an approach that celebrates what's local and what's already growing around us. Fresh coconut adds flavor to dishes like our Coconut Ceviche and Olhuveli Salad at Sip Sip, while coconut milk finds its way into breakfasts, desserts, and plenty more. Then there's coconut ice cream at ICE, which speaks for itself.
