Under the direction of Chef Andrés Fernández, these elements come together in a menu shaped by memory, craftsmanship, and a deep understanding of local ingredients. His approach draws from the culinary traditions he grew up with, refined through years of experience in Yucatán's most celebrated kitchens, including a restaurant recently awarded two Michelin stars, and shaped by working alongside one of Mexico's most respected chefs.
