MEET CHEF WALTER

His journey into the kitchen was driven by his curiosity to understand and recreate the dishes he fell in love with such as the Mille Crêpes.

With a strong focus on spice blending and fermentation, he is deeply passionate about exploring the complexity of ingredients and how they interact. He enjoys pushing boundaries in the kitchen by experimenting with diverse flavour profiles, refining techniques, and uncovering new ways to balance and harmonise taste. His approach is both intuitive and intentional, allowing him to create dishes that are layered, dynamic, and thoughtfully composed.

You can find Chef Walter mostly in the cold kitchen where he quietly sets the tone for service. From delicate amuse-bouche to precisely piped sauces, every element is prepared with care and patience before it reaches the table.

MEET CHEF VINCENT

10 years in the kitchen at Jeff’s Cellar, Chef Vincent grew up surrounded by food. From watching his uncles run Chinese kitchens to learning how to cut faster, cleaner, and smarter from a young age. He believes that mastery comes from mistakes. Every setback is a lesson, every long hour is a step forward.

Now leading the butchery and handling most of the kitchen’s fish and meat, he finds his rhythm in precision. His process reflects in his turbot dishes, where three days of careful preparation transform into something deeply considered and refined.
