Pongteh is one of the most iconic dishes in Nyonya culture.
What begins as a humble paste of fermented soybean, shallots and garlic slowly transforms over hours into a rich, comforting stew. The process isn’t glamorous—just patience, time, and countless stirs of the pot.
Traditionally, Pongteh is cooked with pork. At Tranquera House, we prepare ours with chicken instead, allowing more families and friends from different backgrounds to enjoy this heritage dish together.
Perhaps that’s what makes Pongteh so special.
It reminds us that the best things in life cannot be rushed. Good food, meaningful relationships, and lasting traditions all take time to develop.
Every pot we cook carries more than flavour. It carries a story passed down through generations, preserving a small piece of Nyonya heritage for the next.
Some dishes fill your stomach.
Pongteh fills you with a sense of home. ❤️
