Blueberry Cream Cheese Egg Rolls Recipe 🍇✨

Ingredients:
• For Blueberry Filling: 2 cups fresh blueberries, ⅓ cup sugar, 1 tbsp lemon juice, 7 tbsp water (divided), 3 tbsp cornstarch
• For Cream Cheese Filling: 8 oz cream cheese, ⅓ cup sugar, 1 tsp lemon juice, 1 tsp vanilla extract
• For Egg Rolls: 12 egg roll wrappers, 2+ cups vegetable oil, ¼ cup powdered sugar
Instructions:
1️⃣ Make Blueberry Filling: Cook blueberries with sugar, lemon juice, and water. Thicken with cornstarch. Let cool.
2️⃣ Cream Cheese Filling: Beat cream cheese with sugar, lemon juice, and vanilla.
3️⃣ Assemble: Lay out wrappers, add cream cheese, then blueberry filling. Fold and roll tightly.
4️⃣ Fry: Heat oil and fry egg rolls for 2-3 mins per side until golden brown. Dust with powdered sugar and serve.
