*What does a vegan eat?*

a person who does not eat meat or fish, and sometimes other animal products, especially for moral, religious, or health reasons.

*Do vegetarians eat eggs?*

Unless they are vegan (meaning they don't eat dairy products, eggs, or any other products which are derived from animals), some vegetarians do eat eggs and belong to a group known as lacto-ovo-vegetarians which according to the Vegetarian Society is the most common type of meatless diet.

- 6 cups of water or chicken broth
- 2 stalks of lemongrass, trimmed and cut into 2-inch pieces
- 3-4 kaffir lime leaves, torn into pieces
- 1 inch piece of galangal, sliced
- 2-3 Thai bird's eye chilies, crushed (adjust to taste)
- 200 grams of shrimp, peeled and deveined (or chicken or tofu)
- 200 grams of mushrooms, sliced (straw mushrooms are traditional)
- 1 medium tomato, cut into wedges
- 1 small onion, sliced
- 3-4 tablespoons fish sauce (or to taste)
- 2 tablespoons lime juice (or to taste)
- 1-2 teaspoons sugar (optional, to balance the flavors)
- Fresh cilantro, chopped (for garnish)

**Optional:**
- 1-2 tablespoons Thai chili paste (Nam Prik Pao) for a richer flavor
- 1 cup coconut milk for a creamier version

**Instructions:**

1. **Prepare the Broth:**
- In a large pot, bring the water or chicken broth to a boil.
- Add the lemongrass, kaffir lime leaves, galangal, and crushed chilies. Let it simmer for about 5-10 minutes to infuse the flavors.

2. **Add the Main Ingredients:**
- Add the shrimp (or chicken or tofu), mushrooms, tomato, and onion to the pot. Let it cook until the shrimp turn pink and opaque, or until the chicken is fully cooked.

3. **Season the Soup:**
- Stir in the fish sauce, lime juice, and sugar (if using). Taste and adjust the seasoning as needed. If you prefer a spicier soup, you can add more chilies or Thai chili paste.

4. **Optional Coconut Milk:**
- For a creamier version, stir in the coconut milk and let it heat through. Do not let it boil.

- Remove from heat and discard the lemongrass and kaffir lime leaves.
