In our last episode we had a discussion on the topic "dealing with marriage stressors" and loss of a loved one which can result to grieve was mentioned as one of the stressors couples face in marriage and this can affect the family.

JOB DESCRIPTION OF F & B SUPERVISOR

• Responsible for the day to day operation of the food & beverage department and all his sections, aboard the ship according to company´s instructions as directed by the Hotel Management..

• Follow up on company´s policies, rules, regulations and procedures.

• Responsible for the standards of service delivered to the customers in the bars, dining rooms, buffets and all other food & beverage outlets by F&B employees. He has to ensure the quality of services in accordance with the company standard.

• Ensure that all the F&B sections are organized, performed their duties and maintain their areas and equipment in a manner in compliance with the company policy and instructions as directed by the Hotel Management

• Ensure Utensils are properly prepared ahead for time for the daily business.The care and management of the utensils should be over see by you.

• Approves all F&B requisitions so as to ensure that they are prepared properly and placed in a proper and timely manner in compliance with company´s instructions.

• Ensure that all F&B areas are received and inspected in a timely manner and are in compliance with company´s standards by checking for quality.

• Maintains the highest level of sanitation throughout all food and beverage areas as prescribed.

• Check storerooms task related to F & B department as per company’s instruction, including but not limited to handling, requisition record, distribution and usage.

• Oversees the overall operation of the kitchen as per company’s instruction, including but not limited to shift, food preparation, stock at hand and bookkeeping.

• Participates in the daily preparation of meal times scheduled of all F&B areas collaboration with the Chef in Accordance with the company´s instructions.

• Notify the indents for repairs of equipment prepared in your department to the general manager before submitting them to the chief Engineer and keeps an updated record of each request.

• Responsible departmental record keeping, report preparation and the final delivery of all F&B products in accordance with company´s standards and submitted to the general manager.

• Responsible for the overall implementation, consumptions of all F&B policies and procedures pertain to employees, work manuals, sanitation requirements, consumptions, costs, qualities, menus, and others.

• Assist guests in any special request, including but not limited to parties, special functions, special diets.Oversee, prepare and manage special function and events like parties ,meetings, etc

• Maintain proper consumption levels as instructed by the company and maintaining effective cost control in all areas of the F&B department. Ensure the proper and adequate use of recipe for meal preparation in the kitchen.

• Prepare proper forecast and reach desired revenues for all beverage outlets onboard.

• Sets an example for the entire F&B department by always displaying impeccable behavior. Ensure that subordinate compile to the dress code

• Maintain, monitor and create high level of moral ,smooth interaction and work place relation with colleagues been a step ahead of your department heads at all time for effective productivity through cooperation and communication.

• Assist those employees in the F&B department who are needed, ensure that all crewmembers in your department receive a complete familiarization and training for their positions when signing on and treated in a fair and unbiased fashion without exception.

• To coordinate all sign on and sign off procedures of crew members within the department, ensuring that proper following up and documentation of same is executed.

• Reviews and preparing performance evaluations of your entire department as per company´s instructions. Maintain open communication with the general manager and avoid any form of conspiracy.

• Countersigning of all requisitions and purchase requests. Approves all work schedule prepared by his department heads.
• Conduct spot check and carry out daily stock check of the goods in your department.

• Oversees the activities and maintenance of the following areas:

- Main guest dining rooms and storage areas
- Main galleys and storage areas
- Food and Beverage provision rooms and storage areas
- Satellite food preparation areas (bakery, butcher)
- Hotel department halls
- Crew galleys, food preparation and storage areas
- Indoor/outdoor food preparation pantries and galleys
- All guest bars and lounges, pantries and storage areas
- Outdoor beverage services

• Perform other duties which are requested by the company.

• Work collaboratively with all departments to make sure operations are running smoothly in tandem with one another

• Direct supervision of the food & Beverage department (kitchen, restaurant and bar)

• Store supervision and maintenance of store regulation, counting, record keeping, record level and maintenance.

• Developing and implementing strategies that will ensure a positive experience that exceeds guest’s expectations

• Daily Supervision of the housekeepers and routine check of rooms.

• Check of daily transactions of the front desk.

• Enforce work discipline among employee.

• Daily report of room maintenance. Overseeing and check of maintenance staff

• Checking the different department for maintenance issues and reporting them accordingly.

• Check generator service due date, Diesel level and water level

• Ensure full functionality of the laundry and performance of staff

• Ensure staff compliance to dress code and reviewing employee behavior, appearance and performance

• Anticipate all guest needs and respond promptly & accordingly

• Establish and maintain standards for staff performance and customer service

• Maintaining full knowledge of all inner working of the hotel, including room rates, hotel policies, specials, availabilities, VIP guests, hotel events and more.

• Conducting meetings/training to ensure that all departments are in working order and manage the overall operational activities of every department

• Present daily report on activities, challenges to the general manger

• Establish and maintain relevant controls and feedback system to monitor the operation of every department

• Plan and implement systems that perform the work and fulfill the mission and goals of the department effectively and efficiently

• Put measures to enhance and accomplish speed, quality, efficiency, quality goals, productivity and output of every department

• Maintain transparent communication and appropriately communicate organizational information through departmental meetings, all staff and one-on-one.

• Maintain employee work schedule including assignments, job rotation, duty delegation, cover for absenteeism, etc

• Provide effective performance feedback through employee recognition, rewards and disciplinary actions.(Must be confirmed with the GM and MD especially on rewards)

• Delegate responsibilities and expect accountability and regular feedback ensuring organizational policies and procedures are followed

• Create a workplace culture that emphasizes the identified mission, vision, guiding principles and values of the organization.

• Set performance deadlines and communicate them to subordinates

• Maintain timekeeping, personnel records and pass information from upper management to employee and vice versa

• Prepare periodic report for the manager that tracks strategic goal achievements.

• Communicate regularly with the general manager or MD where the manager is absent or as required by the company.

• Preparing report daily, weekly and monthly on all activities and submit to the manager.

• Planning work schedule for peak days (weekends) and periods

• Liaise with the manager on effective running of the organization.

• Enforcement of rules and discipline among employee(check of resumption time, departure time and permission procedure)

• Establish and maintain relevant controls and feedback system to monitor the operation of every department. Also supervise and Train subordinates.

• Ensuring close super visioning for all services provided directly by the hotel especially the general implementation of new standards and training of the personnel behavior in the hotel.

• Disbursement of cash, bank reconciliations and records managements

• Internal control system and practicing 24 online accounting software

• Posting of daily sales collection to the Accounting system.

• Generating and receipting of invoices, purchase order and delivery notes.

• Reconciling daily sales and expense on cash collection against the company accounting system.

• Responsible for confirmation of receipts and the safe keep of cash

• Responsible for Inventory management

• Management of return–inwards and records

• Assisting in the re-structuring of internal control systems.

• Auditing and validation of payment vouchers.

• Preparation of timely reports and submission to the general manager before deadline.

• Provision of accounting information for internal and external auditors.

• Make proper enquiry and checks of accounting records of all the departments in the firm.

• Prepare statistical report for each department with the profit and loss statement latest by the 3rd day of the next month.

• Account receivable and payable must be accurately documented and kept. Follow up should be made on all account receivables and general manager should be notified ahead of time.

• Detailed and accurate daily, weekly, monthly accounting report should be prepared and submitted.

13. Inspect deliveries for damage or discrepancies; report those to accounting for reimbursements and record keeping.

a. Education: Graduate, OND/HND
b. Language: Competence in spoken English,
c. Age: 23 – 30 years
d. Experience: Accounting Clerk or Storekeeper , 3 years total experience,
e. Candidates must have a dynamic leadership style,
f. Positive attitude as a person and to work,
g. Excellent communication, Social and decision-making skills, Astute business acumen.

It was a sunny afternoon one beautiful Friday 2014 in Festac town,Lagos Nigeria.I badly needed a place to ease off the stress of the day and have a chilled drink in a conducive and friendly atmosphere.

As I strolled down the street of 1st Avenue,Festac, I noticed a magnificent edifice which looked uniquely different.Immediately,I felt this craving to rush into the building not knowing for sure it was a hotel.

Oh my world! My ovaries!Unquestionably different! That was the first impression I got,very neat,welcoming,comfortable,friendly,secured and much more than you can imagine.

I quickly grabbed a chilled bottle of drink with a bowl of classic fish pepper soup...I am so sure you want to be here with me right now.What a day well spent!
