Swiss roll
Ingredients
3/4 cup cake flour
5 eggs (separated )
1/2 cup white sugar
3 Tbsp vegetable oil
3 Tbsp milk
1/2 tsp baking powder
2 tsp vanilla essence
1/4 tsp salt

*All ingredients should be at room temperature

Instructions
1. Separate the egg yolks from the egg whites.

2. In a large bowl add the egg whites and mix on low speed . Gradually add 1/4 cup sugar. Leave the other 1/4 cup for later .
Mix until a thick white consistency is formed.

3. In another bowl add the egg yolks , vanilla, milk oil and the remaining 1/4 cup white sugar. Mix well .

4. Sift in flour , baking powder and salt (to the egg yolk mixture) . Mix gently then gradually add the egg white mixture. Don’t all it all at once . Do it in 3 batches .

5. Line the baking tray with parchment paper. Pour mixture (batter) .

6. Bake in a preheated oven at 160 Degrees Celsius for 25-30 minutes or until well baked.

7. Once well baker let it cool for 5 minutes whilst in the baking tray . Then remove from the baking tray to cook off completely.

8. Take a knife and cut off the edges . Spread whipped cream or jam . Gently and carefully roll the cake sponge .
Take parchment paper then wrap it up . Keep in the fridge for at least one hour .

Corn 🌽 Flakes Recipe

INGREDIENTS
2cups of yellow cornflour
1tbsp sugar
1tsp salt
1 tbsp Vanilla flavors
250ml of water

Instructions
Firstly , grind your dried corn into flour, or get already made cornflour from a store.
Sieve the cornflour gently.
Turn 2cups sieved cornflour inside a bowl and one tea spoon of salt, one table spoon of sugar.
Mix everything very well before adding the water

( When adding the water , go gently by adding it bit by bit. It should be a bit thick and slimy .

Turn the mixture into a baking tray and use your spatula to spread the corn mixture wide on every sides of baking tray.

Then put the tray in the middle of the oven and and allow it to evenly bake the corn flour dough into crunchy corn flakes .
( Bake it on a low heat)

If you don't have oven, pour your corn flour dough in a stainless plate and place on top of your stove or Gas .

Note : check it frequently to ensure that it doesn't get burnt when it's finally dry , you will see cracks , you can also touch it to see if it has dried well.

When is dried your cornflakes is ready .

Step 1: Processing Cassava

RECIPES FOR DOUGH
* 2 cups of all purpose flour
* 2 tablespoons of sugar
* 1 tablespoon of instant yeast
* ½ tablespoon of salt
* ½ cup of water
* 2 tablespoons of vegetable oil
TOPPINGS
* Chicken
* Seasoning cubes
* Ginger powder
* Chili pepper
* Salt
* Garlic powder
* Pizza sauce
*Yellow & red bell pepper
* Chesse
PROCEDURES
* In a mixing bowl, combine the flour, sugar, instant yeast, salt and whisk. Add the water and vegetable oil. Mix with a spatula to form a dough.
* Transfer the dough to a floured surface and knead until it becomes stretchy. Place in a greased bowl and cover until it doubles in size.
* Cut the chicken into smaller sizes, season with salt, ginger and garlic powder, chilli pepper and seasoning. Make sure the ingredients touches all sides of the chicken then allow to marinade for 10mins. Fry and set aside.
* Knock the air out of the dough and roll. Place the rolled dough into a pizza pan. Create some openings in the dough using a fork and place in a preheated oven of 175°c for 5-7mins.
* Brush some pizza sauce on the surface of the dough, add the sweet peppers (red & yellow bell pepper), chicken, cheese. Repeat this process twice. Brush some vegetable oil around the dough.
* Bake in a preheated oven of 175°c for 25-30mins.

8.lce fish(Titus)or any of ur choice
9 .seasoning cube
10.onion
12.pepper(fresh/grinded

14.frying pot.
15. Sugar 150g
PROCEDURE
For the dough
1.Mix your flour,baking powder, salt,nutmeg,milk flavor together.
2.Add your butter and massage into the mixed flour till it's well Incorporated,and start adding your water (not hot water)bit by bit till u get a firm dough.cut the dough into desirable size.
For the fish
1.Season your fish with little salt and Maggi,boil a little till tender and removed from fire then 2.gently remove the bones from the fish and mash.
3.put your frying pan on fire,add a little oil, add your chopped onion and little pepper then add the fish with( curry and tyme if u want)fry a little and remove.
4.Roll out your dough on a flat board with rolling pin,you can trim the edges of your dough if you want to have a perfect fishroll.

This recipe goes without egg

INGREDIENTS USED
FLOUR 2cups
BUTTER 2-3 tablespoon
SALT. A pitch will do
YEAST. 1/2 tablespoon
WARM MILK OR WATER 3/4cup
SUGAR. 3tablespoon
NUTMEG 1/4tsp
MILK FLAVOUR(POWDERED) 1tablespoon
OIL (FOR FRYING)

PROCEDURES
* in a clean bowl,sieve in your flour and add in all your Ingredients as seen in the picture...
*and mix until fully incorporated
*transfer to a work table and knead for 20 -30mins until soft and smooth..
*cut and weigh into your desired size

HAMBURGER BREAD 😋
Ingredients:
2 cd active dry yeast
1 cup warm water
2 tbsp warm water
⅓ cup vegetable oil
¼ cup sugar
1 beaten egg
1 tsp salt
3½ cup flour
Preparation:
1. In a large bowl add the yeast, warm water, oil and sugar, mix until the ingredients are incorporated. Let it sit for 5 minutes, until the mixture begins to foam.
2. Add the beaten egg, salt and flour, mix until the ingredients are integrated.
3. Knead the mixture until smooth and elastic, for 3-5 minutes. Don't let the dough spongy.
4. Divide the dough into 8 equal parts and form each piece into balls.
5. Preheat the oven to 220ºC. Place the table balls on a greased baking sheet or lined with baking paper.
6. Cover the dough with a kitchen towel and let it rest for 10 minutes. After time, glaze the bread and sprinkle sesame seeds.
7. Bake until golden brown, 8 to 12 minutes. Remove from the oven, let cool and cut when you use the bread.

CHAPMAN DRINK
Nigerian drink. These ingredients would serve four persons.

Ingredients for chapman Nigerian Drink

Serving: 4 persons.

A bottle of Fanta (35cl)
A bottle of Sprite (35cl)
Grenadine syrup (1 cup)
5-10 spoons of orange juice
1 lemon or lime
cucumber
Ice cubes

I use the orange and cucumber for garnishing; you can use lime, oranges, cucumber, grapes, a combination of two or even just lemon is okay.

Preparations for Original Chapman Drink

It is also advisable to chill the Fanta and sprite before using them. You should remember that chapman must be served cold or Chapman will arrest you himself 😀 So the best approach would be to chill the major ingredients before the preparation.

How To Prepare Chapman Drink

Step 1

Get a simple wine glass or a giant mug, pour a cup full of grenadine syrup.

Step 2

Pour in the sprite and Fanta into the same jug.

Step 3

Add the fresh orange juice, and shake or stir with a spoon.

At this point you are almost done with making the Chapman Nigerian drink, distribute in glass cups and then throw in the garnishing fruits.

Step 4

Cut the cucumber/oranges into triangular shapes and throw them into the mixture. Cucumber or lemon can be used for garnishing;

1. In a large bowl cream the butter and sugar together until light and fluffy.

2. Add vanilla then mix in the eggs one at a time .

3. Sift in flour, salt , baking powder. Pour milk then mix until the dry and wet ingredients are well combined.

4. Line the muffin tray and scoop the batter (mixture) using a spoon or ice cream scoop.

5. Bake in a preheated oven for 20-25 minutes

Ingredients
-2 Cups black-eyed peas dry
-1 Small Habanero
-3 ounces Red bell pepper approximately half of one red bell pepper
-1 small Onion finely chopped
-Salt
-1 chicken bouillon cube
-1/4 cup water for blending - a little extra might be required
-Vegetable Oil

-Instructions
Soak the beans in room temperature water for about 15 mins. Drain the water and place the beans in the food processor.
-Wash to remove dirt.
-Pour the clean beans into a blender, add the water, red bell pepper, habanero pepper, salt, bouillon powder, and crayfish, and blend until smooth.
-Whisk for about 3 to 4 mins.
-Add the finely diced onion and gently fold with a wooden spoon or spatula in one direction.
-Heat some oil in a pan. -Drop heaping tablespoons of batter into the hot oil, frying in batches to prevent overcrowding. Flip once or twice to ensure even browning—fry the Akara for about five to six minutes, or until golden brown on all sides.

PLANTAIN FRITATA🤤

Ingredients;
Bell peppers of your choice..
Veg oil
Plantain
Sausages
Steamed Chicken fillets (optional)
Eggs
Seasoning cubes
Salt
Nutmeg
Scotch bonnet pepper
Tomatoe
Sweet Onions
....
Cut bell peppers in desired shapes (square and long) set aside.

Chop onions in tiny bits and set aside.

Chop scotch bonnet pepper and tomatoes in desired sizes and set aside.

Chop sausages or Steamed chicken fillets in desired shapes...set aside.

Unwrap seasoning cubes and set aside.

Unwrap curry, thyme and nutmeg...set aside.

Crack eggs, add a pinch of salt, a pinch of seasoning cubes and proceed to whisk it and set aside.

________...Get a clean pan, preheat some vegetable oil in it, cut plantain in rings and fry till it's golden brown. Set aside.
...Add chopped Onions and fry till it turns translucent, then introduce your scotch bonnet pepper, the square shaped chopped bell peppers and Tomatoes...stir and allow to simmer for 2mins on low heat.
...Add a pinch of curry, thyme, salt and nutmeg...stir and allow to simmer for 1min.
...Put off the cooker and allow the sauce to cool off for 5mins.
...Pour sauce into whisked eggs and stir till it's properly integrated.
...pour some vegetable oil into a pan and pour the egg sauce mix into the pan.
... Immediately add your fried Plantain as toppings then proceed to add the remaining long chopped bell peppers.
...Add sausages or Steamed Chicken fillets.
...cover and allow to cook for 7mins on extremely low heat.
.... slice in triangular shapes and serve with your choice of am English breakfast..(could be toast bread and baker beans, grilled sausages, ring shaped sliced tomatoes and tea or coffee)
