Finally fixed this bedhead that has been sitting in the container and storage for over 10 years. A bit of work fixing the damage and picking up pieces from Ali Express to gold leaf. The King size headboard made from an old door. A bit of filling, plywood and trimmer with more carved pieces from Ali Express for the inserts and painted two tone cream.

I have decided to put up my much requested recipe for Kumera and White Chocolate Cake with Salted Caramel Cream Cheese icing so I can direct those wishing to make this to here.

150g Butter melted
250g cooked and mashed kumera
200g White Chocolate melted
150g coconut sugar or dark brown sugar
250g flour
2 tsp baking powder
2 eggs
1 tsp vanilla essence

Heat oven 170C grease and line round 22cm cake tin.
Mix cooked kumera melted butter and white chocolate sugar together. Mix in flour eggs vanilla and baking powder until combined. Pour into cake tin and bake 40 - 45 mins or until skewer comes out clean. Cool 5 mins then turn out onto wire rack to cool completely before icing.

Salted Caramel sauce
120g butter
150g cream
100g coconut sugar
1/4 - 1/2 salt

Melt the butter in a pot add cream sugar and salt and stir for 5 - 6 mins on a medium heat and allow to cool

Salted Caramel Cream Cheese Icing

250g Cream Cheese
2 tbs salted caramel
1/4 cup icing sugar

I block of cream cheese cut up in a bowl add 2 tbs os salted caramel sauce or to taste and 1/4 icing sugar mix together well.
Cut cake through the middle. spread 1/2 the icing on the cut half. Put top layer on and use remaining icing to so the top. Smash salted caramel brittle and sprinkle on top of iced cake.

You could make your own salted caramel brittle or do what I do for now and purchase the Kaipti salted caramel brittle.
