tating road noise. We are happy for you to use our kitchen or our large bbq if you do not wish to go out for a meal. We have indoor or outdoor dinning tables. Our rooms are queens, there is no provision for another bed. We are a non-smoking establishment but do cater for smokers outside. We are in the centre of most of the tourist attractions with the closest being metres away and the other main attractions within a 1 to 10 mile radius. Apparently yeast is out of stock too🤷🏻‍♀️Never fear lockdowners.....unleavened flatbread is here!! If you’d like to make bread without yeast, here’s my easy-peasy flatbread recipe - great for turning into garlic butter naan to have with curry, a wrap Middle Eastern style, or a (non-traditional but still awesome) pizza base👍 Here ya go lockdowners....

- 2 cups self-raising flour (or plain flour with 2 teaspoons baking powder added)
- 3/4 cup milk (of any kind), or plain yoghurt or water
- 1.5 Tablespoons olive oil (or any oil)
- 1/4 teaspoon salt

Other ‘nice to haves’ = butter, garlic, fresh herbs (but not essential!) to make a garlic n’ herb butter to spread on

1. Place flour, milk, oil and salt in a bowl and mix to combine.

2. Knead on a lightly floured surface for 5 minutes or until dough is smooth. Divide into 4-6 portions and leave to rest on the bench for 10-15 minutes or so.

3. Heat a large, heavy-bottomed skillet or fry pan on medium heat. Roll each piece of dough out into a roughly 25cm circle, lightly brush with a little oil. Place in hot pan and cook for about 2 minutes each side or until puffed and golden. If you’re using garlic and herb butter, spread it on whilst bread is hot. Repeat with remaining dough☺️

Well, here we are flat out again, had the biggest November yet and have got 100 plus forward bookings for the rest of the season plus return guests from Europe so pretty happy that things here at Rosie's are going so well. We meet so many lovely people from all over the world and many have stayed in contact with us through Facebook and other means. My gardens are beautiful with my lillies out in flower and lots of other plants in colour too.

Warren and I wish all of you a very Happy Christmas and New Year.

Back in full swing again, going to be a busy tourist season, guests every night. Rosie's gardens are looking really good and another month and there will be beautiful lilies flowering. Looking forward to return guests from Germany in February.

Rosie's is doing good, had a very busy summer but this month slowing down a bit so doing lots of bits and pieces of maintenance etc. Warren has been putting new decking out the front which looks good, I have been able to get some time in the garden but hours more needed to be done to get it looking good again. Had some fabulous folk staying with us this year and made lots of new friends who we hope will keep in touch with us. Rocky and the rest of our fur friends are doing well as are we. Hope many of you can come back again soon, I know that most of you are from the Northern Hemisphere and we are a long way away but you are always welcome in our home which is your home away from home when you are here. It is just about time to start lighting the wood fire, winter is around the corner but we will stay warm and cosy here as I hope everyone does whichever part of the world you come from. Very busy month, February and March nearly fully booked too. We were invited to Rainbow Springs last Friday night for a scary and spooky night (plus a beautiful meal and free drinks). It was an amazing night, not too scary for us as we are used to extreme scary things in the outback but the spooky part lived up to it's name, we had to walk past the spookiest house in Rotorua four times on our adventures around the park in the dark and every time we walked past there were different lights on in the house (nobody was there or lives there), at least the door wasn't open this time. I know somebody who used to live there and they encountered the real thing (ghosts) on many occasions, my hair really did stand up, it was very spooky.
