A gluten-free ‘mountain bike’ cake inspired by the beautiful snow-covered peaks surrounding us, naturally coloured with spirulina and matcha, with homegrown herbs and native foliage to complete the scene. This vanilla cake is studded with raspberries and white chocolate drops, filled with raspberry compote and Swiss meringue buttercream.

It was a privilege to create a cake for 8 x 80th birthdays, such a remarkable celebration. This vanilla cake is studded with raspberries and strawberries, and it is filled with a mixed berry compote and Swiss meringue buttercream.

The second cake for the 100th birthday celebration. This is a double layer carrot cake filled with homemade caramel sauce and cream cheese icing with piped white chocolate butterflies in the favourite colour, turquoise, with pressed and fresh edible flowers from the garden.

One of three cakes for a very special 100th birthday celebration finished in the favourite shade of turquoise, with fresh and pressed edible flowers from the garden, and royal icing butterflies. This cake is gluten-free Hummingbird (banana, pineapple and coconut) filled with coconut caramel sauce.
