Hand-speared snapper sashimi, ginger XO sauce, smoked white bean purée, fried anchovies, lemon and fried parsley.

Serving snapper this fresh in such a remote setting is what makes this dish so special. Lightly cured and sliced for sashimi, with the rest of the fish used in our house-made ginger XO sauce.

At Minaret Station, there’s no set dinner menu. Our multi-course offering changes with the season, the produce available and what’s inspiring the kitchen.
