A moment of pleasure among friends.

I'm not really what you'd call a chef, not having undergone 15 years of hard training under the authority and rigor of a passionate, experienced man. Besides, few people who are called Chef have followed the training that can lead to that title...
But I ate very, very well when I was a child. My mother was a cordon bleu, and she loved above all to give us the pleasure of a beautiful table with succulent dishes. When I began my life independent of what was called the new generation, I was quickly struck by the culinary mediocrity of my girlfriends...so I took to the stove. A life of travel from Africa to China, via North America and throughout Latin America allowed me to taste the flavors of the world. I never learned to cook, but I remember the flavors, and my traveler's curiosity, coupled with a free spirit, inspires me to experiment with new tastes. Since I settled in the hills of Boquete 16 years ago to discover and experiment the farm experience, I have made the flavors of the earth, love, and respected nature available to me. So yes, you can come with friends for a visit and lunch at the farm. No more than 6 people at a time so that it is a pleasure for everyone.

Jaguar, a beautiful nocturnal encounter.
Wild on the Farm is completely interconnected with the Amistad National Park, and therefore encounters with wildlife are frequent. We often see tracks of jaguars, ocelots, jaguarundis, deer, and wild pigs. In the last 16 years, we've seen jaguars three times, and the story I'm about to tell you happened during the last moon.
At 3 a.m., a commotion with my outdoor furniture wakes me up. I immediately think of a dog. My beautiful dog, Jaya, died two months ago; nothing deters visitors. I go to the window; the moon is intense. I see a moving black ball. I always think of a stray dog, and I let out a scream. The black ball splits in two and returns to the terrace of the house, from where the long and majestic mother emerges. Don't panic, they'll sail off at a leisurely pace to visit the farm. In the morning, we'll find tracks among the cabins, then they'll return to the forest.
I've spent my life in the wilderness, but it's always a wonderful and, for me, essential moment to have this life close by.
