A KIMCHI FACTORY IN BENGUET
In April 2022, news broke that the province of Benguet was exploring the establishment of its first kimchi factory, an initiative aimed at processing wombok (Chinese cabbage) into kimchi, the famous traditional Korean dish.
Four years later, the plan has yet to be realized. Still, the need for it remains urgent. Benguet farmers continue to face the recurring problem of oversupply, often forcing them to dump or discard their produce at a loss.
Instead of letting wombok go to waste or be turned into fertilizer, this proposed facility could transform surplus harvests into a high-value, nutritious product. A kimchi factory would not only reduce waste but also open new economic opportunities for local farmers.
With the right support, Benguet can even bring in skilled Korean kimchi makers to train our kailyans, ensuring quality production that meets international standards. In time, this could position the province as a source of export-quality kimchi.
