Here is a delicious goat kaldereta recipe:
Ingredients
- 2 lbs goat meat, cut into 1.5-inch cubes
- ¼ cup vinegar
- 1 tbsp salt
- ½ cup cooking oil
- 5 cloves garlic, minced
- 1 large onion, minced
- 1 (2-inch) cinnamon stick
- 2 bay leaves
- 4 tsp tomato paste
- 2 medium potatoes, cubed
- ½ large red bell pepper, sliced
- 1 tbsp whole black peppercorns
- Salt and ground black pepper to taste
- Optional: ½ cup liver spread, ⅔ cup green olives, 1 tbsp pickles
Instructions
1. Marinate: In a bowl, combine goat meat, vinegar, and salt. Let it sit for 30-40 minutes, then drain and pat dry, reserving the marinade.
2. Brown meat: Heat oil in a heavy saucepan over medium heat. Brown the meat in batches until golden all over, then remove and set aside.
3. Sauté aromatics: In the same pan, cook onion and garlic for 2 minutes. Add peppercorns, cinnamon stick, and bay leaves; cook for 1 more minute.
4. Simmer: Return meat to the pan, add reserved marinade and tomato paste, stir well. Pour in 2 cups of water, bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
5. Add vegetables: Add potatoes and continue simmering for 45-60 minutes until meat is tender. If using optional ingredients like liver spread, olives, or pickles, add them now.
6. Finish: Add bell pepper strips and cook for 3-5 minutes until tender. Season with salt and pepper to taste. Remove cinnamon stick and bay leaves before serving.
