On Friday, 14 August, Nisha, the Raffles Gin Butler of Elephant Bar, takes over Long Bar at Raffles Makati with gin cocktails that carry Cambodia in every glass: Kampot pepper, strawberry and basil, Maison Ferrand spirits. Her Berry Suspicious arrives with a dash of magic foam and a small surprise.

In July, Long Bar went to Siem Reap. Now Cambodia answers.

Miso Black Cod Provençal, glazed to a caramel edge. Lamb Rack, pink at the centre, rosemary catching in the jus. The French Table asks you to choose.

Nine floors up, there's a dining room that seats ten, and it's yours for the evening.

Long dark wood table, fresh florals at intervals, a run of Cubist artwork along the wall. Floor to ceiling windows put the Makati cityscape at the head of the table too, once the light turns gold.
