A Filipino classic, given a new form.

Sisig traces its roots to Pampanga, popularized in the 1970s by Aling Lucing, who turned pork scraps into a Kapampangan classic known for its smoky char and citrus kick.

We put our own twist on it, grilled chicken breast stands in for the pork, layered over mozzarella and tomato sauce, finished with a sunny side-up egg running into every slice the way sisig is traditionally topped.

A familiar favorite, given new shape without losing what made it loved in the first place.
