Royal bibingka

● Ingredients:

● 3 cups glutinous rice flour
● 1 can coconut milk
● 3/4 can condensed milk
● 1 cup evaporated milk
● 3 tbs Melted butter
● 3 eggs
● 1/2 cup sugar
● 1/4 tsp salt

● Toppings:
Remaining condensed milk
Grated cheese

● Combine eggs, sugar, vanilla extract, pinch of salt. Stir to incorporate, add melted butter, condensed milk, coconut milk, evaporated milk. Slowly add glutinous flour. Mix until no lumps and smooth runny batter. Strain if needed.

● Bake for 30-35 minutes over 350*F, remove from oven. Add the remaining condensed milk, grated cheese and bake for another 15 minutes or until golden brown

Suman Saging na Saba recipe 😋

Mga sangkap;

15pcs saging na saba
1 buko, shredded
1 ½ cups light brown sugar
1 cup glutinous flour
1 cup coconut cream

Procedure:
Hugasan at ilaga ang manibalang na saging na saba sa loob ng 15 minutes, do not overcooked.
Pagkatapos mailaga, palamigin ng bahagya saka balatan at ilagay sa isang mixing bowl.
Durugin ito sa pamamagitan ng potato masher, do not over mashed. Mas masarap yong medyo may nakakagat kang saging 😅
Ilagay ang buko, asukal,glutinous flour at coconut cream.
Haluing mabuti hanggang sa mag incorporate na ang mga sangkap.
Hugasan at punasan ang dahon ng saging, isalab ito sa mahinang apoy para hindi madaling mapunit kapag pinangbalot ito.
Mag lagay ng isang scoop ng saging na saba mixture, gumamit ako ng ice cream scoop size 6cm para pantay ang laki ng suman na lulutuin natin.
Itali lang ang magkabilang dulo ng mga suman. Nakagawa ako ng 15pcs.
Ilagay sa kaserola at lagyan ng tubig. Lutuin sa loob ng 45 minutes sa katamtamang lakas ng apoy.
After 45 minutes, hanguin at palamigin. Magtimpla na rin kayo ng kape 😄 masarap ipartner sa black coffee!

Biko Recipe 🤤😋

INGREDIENTS:
● 2 cups glutinous rice (malagkit)
● 4 cups coconut milk, divided
● 1 ½ cups brown sugar
● ½ teaspoon salt
● 1 cup coconut cream (kakang gata)
● Banana leaves (optional, for lining)

PROCEDURE:
Cook the Rice:
● Wash the glutinous rice thoroughly until the water runs clear.
● Combine the rice and 2 cups of coconut milk in a rice cooker. Cook until done. If you don't have a rice cooker, you can cook it in a pot over the stove. Bring to a boil, then reduce the heat to low and simmer until the rice is cooked and the liquid is absorbed.

Prepare the Coconut Mixture:
● In a large non-stick skillet or wok, combine the remaining 2 cups of coconut milk, brown sugar, and salt.
*Cook over medium heat, stirring continuously until the sugar is dissolved and the mixture starts to thicken.

Combine the Rice and Coconut Mixture:
● Add the cooked glutinous rice to the coconut mixture. Stir continuously until the rice is evenly coated and the mixture becomes thick and sticky. This will take about 15-20 minutes.

Prepare the Topping (Latik):
● In a separate small pan, cook the coconut cream over medium heat, stirring frequently, until it reduces and the oil separates. Continue cooking until brown solids form. These solids are called latik. Set aside.

Assemble the Biko:
● Line a 9x13 inch baking dish or a round cake pan with banana leaves (optional) for an authentic touch and easier removal.
*Spread the sticky rice mixture evenly in the pan, pressing it down gently to pack it.
Add the Topping:

● Sprinkle the latik evenly over the top of the biko.
Serve:

● Let the biko cool completely before cutting it into squares or desired shapes.
