Tasteful layering for autumn. Our seasonal menu at Terroir 7 has a designer’s eye for proportion: a curve here, a delicate fold there, a finishing touch that brings the whole composition together. Each plate dresses the flavours of Transylvania with care, balancing the pleasure of looking with the much greater pleasure of taking that first bite. Come closer. Follow the scent of fresh bread. From 5-8 November, we're hosting our first Sourdough Retreat at Bethlen Estates Transylvania and just a few places are still available. Between baking sessions, we'll head into the forest for a truffle hunt, following the dogs through the autumn woodland in search of what lies beneath the leaves. Our local truffle hunters will guide the way, sharing their knowledge of the forest and the treasures hidden underground. Back in the kitchen, Andra Ştefănescu, the baker, teacher and storyteller behind Sourdough Explained, will guide us through the pleasure of making sourdough bread by hand. Mixing, shaping, waiting and sharing what comes out of the oven around our table. A few days of baking, fragrant discoveries and good food, with time to settle into village life. Once a school. Now a lesson in slow living. It's hard to imagine that these rooms were once part of the village school. Today, the Saxon School welcomes you into six new spaces of serenity.
We've spent a long time imagining how they might feel: where you would sit with a book, how the morning light would fall across the bed, what you would see when you first opened your eyes. Now, we get to share those little details with you. The blue of a painted landscape, curtains that soften the afternoon light, a chair pulled close to the window. Flowers and greenery gathered by hand from gardens nearby, arranged as we would for someone coming to stay in our own home. There is such pleasure in seeing these rooms ready. A new season is taking shape in our kitchen and this one feels particularly special. Introducing Terroir 7, the new fine dining restaurant at Bethlen Estates Transylvania, opening with a tasting menu inspired by everything autumn so generously brings to the table. Each new dish is shaped by far more than what arrives on the plate. It carries the conversations we have with our producers, the hours spent tasting and refining and the pleasure of finding a new expression for an ingredient we know well. Familiar flavours return with the season, seen from a fresh perspective.

Everyone has been waiting for this moment. The pool. Our first swim, our first plate of local cheese by its side, a glass of bubbles in the sun. Here it is, unfiltered and exactly as it feels through our phones: small moments from a beautiful village in Transylvania, just as the season begins to turn. The days are still warm, the light is beautiful, and if we are lucky, October may give us a few more afternoons just like this. So yes, dream about it. But even better… come and slow down here.

Bread still warm enough to melt the butter. A yolk that gives way at the touch of a fork. Something crisp from the garden, something creamy from a nearby dairy, herbs picked when they actually taste of herbs. Coffee in between. Perhaps another slice of bread. Definitely another slice of bread. Our signature breakfast menu brings the kitchen’s farm-to-table philosophy into the first hours of the day. Served à la carte, it changes with what the land and our local producers have ready for us: ingredients grown, gathered and made close to home, arriving on the plate when their flavour has something worth saying. Breakfast, around here, is worth getting out of bed for.

The former German school in Criș (Keresd, Kreisch) is now open as the newest restored house at Bethlen Estates Transylvania. Its six rooms carry the names of Bethlen family members, revealing small pieces of history to those who rest between their walls. Shown here, The Countess’ Room honours Countess Gladys Bethlen whose care, memory and tireless devotion have helped carry the story of this place forward. The room’s windows look out onto the village with warmth and grace.
