Our wine list, recently honoured with Wine Spectator’s Award of Excellence, brings together distinctive expressions of Transylvania alongside carefully selected wines from around the world. Across the region, vineyards are now entering one of their busiest and most beautiful moments of the year: harvest season. Grapes are being picked at the precise moment that will shape the wines to come, different soils, different altitudes, different expressions of the same land. Transylvania belongs in this conversation, and we are proud to pour it.

Some places fill your time, while others give it back to you. This is how the unmistakable feeling of Bethlen Estates Transylvania has been shaped. A collection of small rituals, great care for details that can seem almost imperceptible and people that pour their hearts and their craft to making every experience truly unique. It begins long before you arrive: with the hands that patiently sanded old wood to reveal its beauty again, the craftsmen who brought historic houses back to life, the farmers and local producers who tend the land and its plants season after season. Because atmosphere is rarely one grand gesture. It lives just as much in a fire lit before you arrive, a table carefully set and the quiet work happening behind every meal.

The past can never return in its original form. But sometimes it finds a new life, shaped with patience, care and respect for everything that came before. In its May-June travel feature, ELLE Decoration Hungary visits Bethlen Estates Transylvania and traces the story of a family heritage slowly brought back into the present. From the individual character of each house to the craftsmanship behind every interior, the article captures the many layers that make the estate what it is today. Behind every course lies a much longer story than the time it takes to enjoy it. Years of culinary exploration, remembered flavours, failed attempts, discoveries and influences from different cultures are gradually composed into one precise experience. This may be the quiet beauty of our cuisine: so much thought, craft and feeling invested in something created to disappear. The dish itself is ephemeral, but what it awakens in you carries on.

Tradition does not have to remain unchanged to stay true. Our kitchen takes the ingredients, combinations, sensibilities and culinary memories of Transylvania and asks one question: what else might they become? Techniques gathered from different parts of the world, open new paths for familiar flavours. Each course carries a trace of recognition followed by the pleasure of tasting something you have never encountered before.

You can book a fine dining experience in our restaurant even if you don’t stay for the night. Reservations available via Ialoc.

Circles, layers, curves, organic decoration and the occasional perfect imperfection. The summer desserts coming out of our kitchen play with form as freely as they do with flavour, turning seasonal fruit and familiar pleasures into compositions made to be admired for a moment then happily undone. A sweet finale that feels light on its feet. Book a generous fine dining experience via IaLoc.

Summer opens the landscape in every direction. Move through the open country on horseback, walk beneath the canopy of secular forests, stand quietly beside the water with a fly rod in hand and learn to read the landscape from those who know it well. Each activity brings you closer to what Transylvanian summers are all about: looking for wonder and finding deep restoration.

Ripe vegetables are filled with textures, aromas and possibilities. And few things capture summer quite like a ripe garden tomato. Bright, generous and best enjoyed at the exact moment nature intended. Our summer menu seasonal dishes are created around ingredients grown close to the kitchen, allowing their character to lead. Join us at the table, book your fine dining experience on IaLoc.

The Art of Sourdough retreat is about honoring the rituals of craft through bread. From 5 to 8 November, Andra from sourdough_explained will guide guests through the tactile ritual of sourdough making in a setting that naturally lends itself to slower living. On the estate, craft lives in many forms: in old beams restored by hand, in thoughtful harvesting and cooking and in the rituals that bring people back to what matters. Our very first retreat is about bread, but also about attention, presence and experiencing the estate more deeply. Learn more and book your spot via: https://bethlenestates.com/introducing-a-signature-retreat-the-art-of-sourdough-5-8-november/
