Northern Swedish food is closely connected to the landscape, the seasons and generations of making the most of what nature provides.
🥔 Pitepalt (potato dumplings)
A true Piteå classic. Large potato dumplings made from grated potato and flour, traditionally filled with salted pork and served with butter and lingonberry jam.
🔥 Suovas & Gurpi (traditional reindeer preparations)
Two foods rooted in Sámi culinary tradition. Suovas is salted and lightly smoked reindeer meat, while gurpi is made from minced reindeer meat and lightly smoked.
🦌 Renskav (sautéed reindeer)
Thin slices of reindeer, usually cooked with mushrooms and a creamy sauce and served with potatoes and lingonberries.
🍖 Tjälknöl (slow-cooked frozen roast)
A frozen piece of meat is slowly cooked for hours, then placed in seasoned brine and served cold in thin slices. Often made with game such as moose or reindeer.
🐟 Röding (Arctic char)
A favourite from the cold northern waters. Often grilled, fried, smoked or cured and served simply with potatoes and seasonal vegetables.
🐟 Surströmming (fermented Baltic herring)
One of Sweden’s most famous food traditions. Traditionally eaten with thin flatbread, potatoes, onion and sour cream. The smell is famously strong; the flavour is much gentler.
✨ Kalix Löjrom (Kalix vendace roe)
The golden roe of vendace caught in the Bothnian Bay. A celebrated Norrbotten delicacy, often served with potato or bread, sour cream, red onion and dill.
🩸 Blodpalt (blood dumplings)
An old northern dish made with blood, flour and, in some versions, potato. A filling tradition from a time when every part of the animal was carefully used.
🫎 Älgstek (moose roast)
A classic northern dish made from slowly roasted moose, usually served with potatoes, gravy or creamy sauce, mushrooms and often lingonberries.
